for magic the gathering they list who wins tours and stuff but how come i never see any info on army lists for the winner of 40k armies?
They publish the results and what army was used but only in terms of codex, eg:
1st Fred blogs Space Marines
2nd John Smith Iron Warriors
3rd Jane Doe Necrons
Copy catting isnt a major worry, there isnt a clear unbeatable army, although last codex Iron warriors was very popular

If I had a Euro for every Iron Warriors' list out there that had max Oblits, max pie-plates, an insanely over-tooled Chaos Lord, and pair of five-wound Lascannons, I'd be able to buy that list myself.
While the lists are never officially published, it's usually pretty easy to glean the list (though maybe not its exact specifics) from battle reports and eyewitness accounts. They make their way onto other, less scrupulous boards.
Occasionally, if tournament organizers see a particular prevalence and measure of success of any given list, they will try to make rules against it.
The example I can think of is the "Thorek Ironbrow Dwarf Gunline". It owned most Fantasy GTs until some of the organizers decided to disallow the Thorek special character.
