Mankind wants to be the sole occupier of the galaxy.
Tau want to expand their little empire and ultimately control the galaxy.
Chaos is probably happy how it is but has designs to rule the galaxy.
Tyranids and Necrons want to kill all life in the galaxy.
Orks just want to fight.
What do the Eldar want? What is their ultimate goal? If it was simply survival could they not just hide?
I can't say I've seen it all but I live for the things that keep me hollow.
To stop everyone else from mucking up the galaxy any more than they already have.

They probably want back what they had before The Fall - control of the galaxy.
Depends on the Craftworld. Most I think just want to survive, and take a proactive role in doing so as they are hunted by both the Imperium and Chaos. Biel-Tann however want to rebuild their empire.
What the other have said (especially in the hugs-department) and stop the C'tans from doing their evil deeds. Probably want revenge on Slaanesh as well...
they want to be left alone, but as common sense dictates people (the other races) are stupid. so the eldar have to run around fixing everything so things dont get too bad before they finaly bugger off
First and foremost, they want to prevent the galaxy from falling into the hands of the chaos gods or the C'tan. Beyond that, I agree with the hugs and survival comments already made
The only constant in the universe is change, adapt or die.
When it says craftworlds are ships, that doesn't really mean they can move around.. They're about as vulnerable as any other planet-sized object, so the Eldar position is actually pretty precarious. They can't just go and hide, because there are just too many dangers out there. Someone would get them, sooner or later.
Eldar want to protect themselves and survive, but to do that they have to preempt the threats they're going to face in future, and this can mean intervening in seemingly random ways all over the galaxy. This unfortunately means they have to fight and take casualities, which means their numbers don't grow.. yeah, you get the picture.
Basically, they're fighting off extinction, and they aren't winning.
