This is just something that has been bugging me for a little while. The grey knights are picked from psykers to better combat daemon forces, but wouldn't it make more sense for them to be psychic blanks or something. To have them be like culuxes assasins so that daemons would be near powerless against them makes a lot more sense to me. Is there any reason behind this such as daemons not being affected the same as psykers or would it have to deal with the fact that the GK supposedly use the Emperors geneseed and that introducing it to a psychic blank would simply overwhelm them since the Emperor was such a powerful psyker or something?

I can only comment on a few things.
First, there are not overly many psychic 'voids' to be recruited into the Grey Knights. Some thing like in an entire generation on a populous Hive World you might occasionally get one. And it will so freak out everyone else around him/her/it that they are usually killed outright. So they are vanishingly rare and they aren't likely to survive very long. There are even fewer that could survive the training a Grey Knight receives.
Second, if I recall some fluff I read in a manual oh so long ago, (possibly my EPIC days) most of the psychic 'voids' are reserved for the Inquisitorial Black Ships. Used to help nullify the cargo holds filled with psychers destined to die in the Golden Throne or Astronomicon. Or hunt down the rogue psychers that show up on planets sometimes, especially Alpha level psychers.
Might they be more effective? Possibly a little. Would they be available in sufficient numbers to matter? Not very likely.

I have a feeling Daemons are not affected in the same way by someone with the Pariah gene as a psyker might be. I think GKs are largely psychic in order to make their Nemesis Force Weapons work properly, and being Psychic may also help in a Grey Knight squad locating the positions of hidden daemons or daemonic possessions.
1. Nulls are rare and less well understood than psykers.. It's much harder to spot them, because the only symptom is that everyone hates them.
2. Most of the nulls in the fluff have not really been grey knight material. They're either physically inept, or physically twisted in some way, or just plain mentally unstable due to a lifetime of random neglect and hatred, and being crapped on by genetics.
I'd guess those who are picked up young enough to avoid becomming bitter little freaks go to the Culexus temple. Assuming they still have normal officio assassinorum dropout (i.e. dropped out of an airlock) rates on their training program, you're going to need a lot of nulls to weed out the very few with the ability to become Culexus agents.
3. Grey knights are good at fighting daemons because they can manipulate the warp, but for some reason are resistant to possession or corruption, which is what makes other psykers bad at fighting daemons. Psychic powers can be used to manipulate and attack the substance the daemon is made of, or to stigmatize them back into the warp. Much more effective than just hitting it with a big sword.
Still.. The ordo malleus does use nulls as well.. They can call in favours from the Ordo Sicarius and the Officio Assassinorum, they can find psychic nulls of their own and recruit them into an inquisitorial retinue (if they can stand having someone around who randomly disgusts them and is incapable of drawing any better reaction but hate or fear) or they can use psyk-out artefacts like the null rod.
Don't forget faith as well.. Pariahs are a powerful weapon, sure, but a decent collection of pentagrammic wards, a nice long litany and the appropriate holy blessings on all your ammunition can do as much as any null could.

They also probably pick psykers because of their will power. I would think it would be harder for a demon to posses someone if they are strong in the mind. Just a thought.
It also makes them more ownage in the game.
There's also the whole GK-Emperor connection.
The Emperor, presumably because of his tremendous will, is a living anathema to the daemons of the warp. The grey knights, rumored to share his very geneseed, probably try to follow in those footsteps.
A pariah is nasty and all, but there's something infinitely more terrifying to a daemon to be overawed by a warp entity more powerful then you are, when all you've got is your warp identity.
