Range 48" Strength 4 AP 6 Type Heavy 2, Blast
Range 48" Strength 8 AP 3 Type Heavy 2
and following that logic that same Typhoon Missile Launcher firing a Krak missile the next turn would no longer be a defensive weapon due to it's Strength 8 stat.
Is this correct or did I miss a paragraph somewhere that excludes the Typhoon ML as a defensive weapon somewhere?

That's exactly the way I play this weapon. You have an option of missile type; one is of Defensive weapon strength, the other isn't. The Typhoon Missile *launcher* does not have a strength of its own, so that suggests that you should go by the strength of the weapon fired by the launcher.

yes, that is the fun of missiles and pintle-mounts. The missile launcher, as stated, has no strength, just the ammo, therefore you can move and still choose to fire a frag as defensive. Its a fun way to say 'get out from under me you silly little hordies!'
