If you're hit by a weapon that's double your toughness, you still roll for armor saves, so long as it's AP value doesn't beat your armor save, right?

That's correct, and clearly mentioned in the right column of the page on which the instant kill rules are explained (page 53 IIRC).
Note that a successful to wound roll (usually 2+ in this case ) is required too.
Also, CC attacks can also cause Instant Death, just like shooting attacks.
And exactly like ID shooting attacks, an ID CC attack also needs to succesfully roll to wound and allows saves unless the CC attack uses special rules which would negate them.
And as AA said, the rules for Instant Death can be found on rulebook page 53.
"The meat things seek to destroy ourselves. They hunt us as we hunt them but they are weak and uncertain. The inferior flesh will be entirely destroyed, all biomatter consumed. Ourselves will fight to the last, all weak flesh must be devoured."
