Would you be able to field a Farseer model legally with no helmet?
I figured you wouldn't be able to equip it with Ghosthelm at the very least, but would there be any further problems (does the Farseer somehow use the standard helmet as an aid in chanelling Psychic powers or something?)
Ruleswise, I would say no as it is a standard wargear on him, though I don't know why you wouldn't want to take advantage of it. It's like saying your Powerfist Terminator will be attack at regular S4 and I4...you just can't do it.
Modelwise, I believe the minis come with it on, unless you converted it. In any case, if you field a model without a helm, I would have to say that he is understood to have it as it is a standard wargear of his (maybe he took it off but it's still in his possession and easily donned when in battle). Just like frag and krak grenades or the bolt pistol on standard marines, the minis don't show it but it's understood that they have it.
You could just throw a eldar helmet on it's base and just say something like "Opps I dropped it"

The "A Smart Player Will..." theory is a complete paradox. If we make an assumption that everything we do is outsmarted, then theoretically we can never win.
Honestly, I'd be really surprised if you ran into too many opponents who would have an issue of it. I mean, would anyone here say, "Well, even though all Farseer's have ghosthelms, you modelled your character without one, so... you can't use that item." WYSIWYG is a rule intended so people can't say flamers are plasma guns, ratlings ar ogryns, and a plush toy isn't a spaw (hmm, that gives me an idea). Being anal with little things to prevent others from being creative with their modelling to me is counter productive.
That being said, yeah go ahead and put a silly helmet somewhere on the model just to save the headache. Make it a female farseer, then your opponents won't mind
