How far exactly do bikes assault? The rulebook doesn't say, so is it the 12" the use for movement, or the default 6"?
You're right it doesn't say, which means they assault the same as normal infantry-6". Under the Beasts and Cavalry entry it specifically says they have a 12" inch assault move. If the rule book doesn't specifically give an exception, there isn't one.
Since the Bike entry on P.53 BRB doesn't specify a distance for their assault move, we have to cross-reference with P.33 BRB under "Declare assaults". This tells us what the maximum assault move distance for most units is. We can infer from this that if no alternative assault movement permission for the unit is mentioned in either the Codex or the Unit Type rules in the BRB, then the unit can only make an assault move of a maximum of 6".

And to add an additional tid-bit, this 6" assault is through difficult Or not-difficult ground. They always get their full movement, they'll just need to take dangerous terrain tests.
