If say a group of orks with rokkit launchas that are inside of an open-topped battle wagon fire their rokkits, do the rokkits (higher than strength 7) count as being main weapons, and cannot be fired more than once if the battle wagon moves?
Also, do models with a rapid fire gun get to fire up to their full range once as they would if they were standing and shooting, even if the transport moves?
And one last question, can an ork big mek with a kustom force field man a bolt-on big shoota while on a battle-wagon.

Weapons that count as main/defensive weapons are the ones the vehicle has on them when the game begins. Weapons the unit they may be transporting are not included in those weapons that count as defensive/main weapons.
If the transport moves it counts exactly the same as if the people inside had moved. So you cannot fire heavy weapons and rapid fire guns cannot shoot their full range. In addition if a vehicle moves a certain amount no one inside may fire their weapons.
With the exception of feral orks, no ork has better than BS 2 so it really doesnt matter which ork is manning the bolted on gun as long as their is a model in the vehicle that can man it.
Best thing for the first two questions is check the vehicle section of the rulebook. (Page reference differs between the BGB and small book.)

Ork Rokkits are assault weapons so you can move and shoot, even from a vehicle.
