Got a quick one: if a unit, such as a Kroot has 2 attacks, according to their stats bar, and their weapon's description mentions that it acts as an extra close combat weapon, does that mean that my Kroot gets 3 attacks (2 natural attacks plus 1 for the cc weapon)? Or does the 2 on the status bar include the cc weapon? I think the total is 3, but I'm askin' to be sure.
You are correct, the base attacks (2) are combined with the extra attack for having 2 cc weapons, for a total of 3 and 4 if charging.

Unfortunately I don't have the new codex so I can't provide any specific help. However, bonuses provided by weapons are generally not included in the profile unless the somewhere in the entry it says that the bonuses are included. Indeed, I have yet to see a unit entry that does not work this way.
