Just like the title says, can I field a giant (or 'mutant monstrosity') with a Chaos Daemons army? I wanted to convert a giant with old Tyranid parts and field him with my Slaanesh army (mainly to obstruct the view of my DP and KoS), if I ever wanted to play a tournament with the army, would it be acceptable?

Official GW GT rules say no. US 'ardBoyz rules say yes. RAW more or less says no, but it's kinda fuzzy. In most friendly games people think it's fine, but if you're doing it to gain some kind of tactical advantage in an already very powerful army, friendly opponents may not appreciate the idea. Final answer: there is no final answer!
Yeah, do DoC even need Giants?
Well, since jbone wrotehe seems to want to use the giant as a very expensive cover. Admittedly, the giant is cheaper than a greater demon, but to use it as a shield you'd have to move the model into harm's way, which often will be closer than 24" to the enemy, unless you just want to stand back with your demons and wait for the enemy (but against an opponent where you wanna shield your KoS not moving forward might be bad idea as well).mainly to obstruct the view of my DP and KoS
And moving a giant that close means he can be showered (and in most cases will be) with a lot of ranged firepower (not to mention that the giant would be in close range for bolt throwers then)
furthermore, unless your opponent puts all his warmachines in one spot the cover granted by the giant would most likely just block out one warmachine. Granted, Terrain pieces will help, too, but your movement will still be rather restricted.
Concluding: I wouldn't mind if a daemon opponent would wanna field a giant (finally something without a ward save in the army!) but as ArchonFarseerGuy already wrote, the daemon rare choices are quite juicy, too.
Oh, and a small sidenote: A DaemonPrince isn't a large target anyways. They can be shielded by a bunch of chaos furies or even nurglings
