When aiming a cannon, after nominating a single model as the target (great eagle), do I have to aim so that the cannonball goes through the center of the base?
i.e., can I aim it so that the cannonball goes through the edge of the base, perhaps towards another unit? Does that make it possible to hit both units?

Yes you can, you could say that you're aiming for the corner of the base, or just say to your opponent that you are aiming in a line that will hit the next unit as well. The only time this will be regarded as unsporting is if you then deliberately (or the opponent thinks you did) guess too far so as to hit more of the unit that you couldn't actually see.
