Simple question: Can jetbikes move and shoot their cannons?

Of course they can; they're infantry like any other (with a few other special rules), and their weapons are Assault.

Remember that they can also move an additional 6" in the assault phase if not assaulting.

Even more than their weapons being assault is the fact bikes are Relentless.

So 12" movement, Shoot (or run) and move 6" (whether you assault or not) or just turbo.

Yes, as Lia said; Jetbikes have the Relentless special rule, the full rules of which are detailed in the rulebook in the Universal Special Rules section, but it essentially means (in this case) that they can fire Heavy weapons, even when they move.

Just read the entry on Jetbikes in the rulebook, it should give you the references for any other special rules pertaining to them.
