Do you beat them the same way you beat VC's (a.k.a. charge.one large unit with 2 lances) or what? How are you supposed to beat the magic and poison? Basically, how do you generally beat them with brets.
P.S. I play mixed, not all cavalry.
I've never had that much trouble with Skaven. Even if they do poison, you still have 2+ armor saves on your knights for the most part. The same things apply for their magic. As long as it doesn't negate armor your fine.
As to how to beat them, its quite simple. Make them run. Once Skaven start running, they don't stop very often. That means hitting them hard on the charge.
Are you talking skaven in general or are you having trouble against a particular army? E.g, lots of warlock engineers, or lots of slaves and war machines etc.
If just in general what does your force comprise of as it may be a simple case of swapping some magic items around to make them uber affective against skaven. The only problem I have found against skaven is people talking about how they have a low leadership, but the forget that ranked up and with a general or hero in the unit can get leadership 9-10, which then pass their break tests to then much down on my knights. Without seeing your army list I can suggest trying to flank with yeomen or p-knights with a frontal charge, but never with another knight unit as it leaves them open for a big flank attack. Failing that try the two lance attack, just be aware that the skaven player may sacrifice a unit in order to set you up for flank charges or cross fire from war machines should you over run.
A trebuchet me solve some problems also if your’ dealing with big blocks, able to kill a good many skaven before having to get the charge in.

I would try setting up the Trebuchet(maybe 2) for flattening those Skaven, worked wonders for me.
As said before try to flank him with Mounted Yeomen(negate ranks bonus). Maybe start hunting his warmachines and more precisly his Jezzails which will really shoot you apart.
But I would compare his army more with dwarves minus the armour. So charge with 2 lances minimum, Guard a Flank with you men-at-arms, or go head to head with the Grail Relique.
Because of the relativly low armour you Bowmen can actually hurt them pretty good.
Play them like you play Dwarves but more of them with less armour and more unstable weapons.(Kill his Weapon teams with Pegasus Knights or Mounted Yeomen).
Well, i've been proxying with my dwarfs while trying out various lists on my friend, but my buddy plays a bunch of gutter runners, a couple of warplightning cannons, some jezails, a couple skaven wizards, and a horde of slaves in a very tactical way and he just seems unstoppabe!!! Basically, I'm throwing a bunch of confused and utterly stupid lists at him and (surprise surprise) they don't work. I guess you could say I'm having trouble with the ranged skaven, but in general I guess I'm struggling with Skaven as a whole.
Their warp lightning spell is very nasty, and with each Warlock able to cast using 3 dice (or even 4) then it can realy hurt. the best counter for that is to take damsels for Magic Resistance in the center of Knight Units. Using 8 Knights per a unit, (or 7 if there is a paladin in there also) then add a damsel for a full lance of 9.
Pegasus Knights should be good for taking out their ''warmachines''. Look towards skirmishing bowmen to aim for the 'warmachine' crew too.
As for dealing with the rest, a decent lance should be able to make mincemeat of a full skaven ranked unit on the charge.

Simplest thing to say is bring a few HEAVY units of knights and get whatever movement you can out of them. Line up for a combo and rush through an easy target or two on your way to their main unit. You'll be sending out lots of psychology tests for those broken units. Meanwhile just try and hold them back with M@A everywhere else. It might be pheaseable to do this with high magic and trebs guarded enough that they can draw fire and survive it. Honestly the only tough unit to beat IMO is plague monks which can only do so much to so fast so just have a good solid force that can at least stalemate them. The second most menacing target is gonna be jezails. Just try and pivot your army in a way you can use their mass to block for you if possible. Otherwise bring some of those nice anti shooting options. I believe we get a banner which is perfect for countering.
