Well, I've been going back through the Bretonnian armybook and looking at the Pegasus knights and a Lord on a Pegasus.
So, two questions, but they're big ones. And I'll mention a few of the own answers I came up, but I'd like feedback from the more experienced community.
1) What's the best way to field and use Pegasus Knights?
I think it'd be using them as supporting chargers to a main charge of Knights. They could use their superior speed to outflank enemy units while the unit of knights charges the front. For this purpose, then, I think it'd be best to use a small group, 3 or so, without any musicians or a standard bearer. Otherwise, they're just too expensive.
2) What's the best way to field and use a Lord or Hero on a Pegasus?
This is probably specific to the character's role - a squad killer might be slightly more useful as they cannot join the Pegasus unit (although they doesn't mean they can't both charge the same unit in the same turn).
Any more advice?
I don't personally use them. But in my gaming group another bretonnian player uses them to great effect.
Pegasus Knight Roles:
-Killing fleeing units
March blocking is pretty easy with their good range. Just land next to them so they can't charge or march and you dictate their movement.
To kill fleeing units, you need at least 3 to get US5. Stand behind an enemy unit that is charged by a lance of heavy knights. When the enemy flees they run into you and die. If they are fleeing, the charge range should allow the pegasus knights to kill them off.
Killing warmachines and archers are pretty much self explainatory.

Pegasus Knights tend to be pretty good all rounders, They cant remove ranks, so charge them into the front if you like. The Lances put in some good high S hits, and the Pegasi themselves hit pretty hard. The only advantage can think of right now tp flanking is to disallow the enemy their parry save from HW/S combo.
As for the Lord, i think Specific roles are best. You can go for a Monster Killer, then have Pallys also on Pegasi as unit killers (BSB with Banner of Lady and Vo Not Outnumbering ) and Character killers.
