Now I'm not the best at writing army lists, mostly I run a fully mounted army with a Prophetess as my general with Heavens. Half the time I can smash through whoever I face and overrun the army.
My two biggest issues I have though are playing a horde Scaven army and the Wurzag mounted boar army.
Is there anyone who has any decent experience with tactics or lists that could stand half a chance against either of these two armies? Would be greatly appreciated.

Now Im not sure what exactly youre facing but heres a few tactics and tricks that could help you against rats and OG's.
Skaven: Banner of the Lady helps negate ranks i.e. Ld bonus they get from rank bonus. They might be steadfast but base Ld is pretty weak.
Trebs to beatdown those hordes before you engage them. Gauntlet of Duel to call out his characters. V.Heroism/Heartwood lance to take out the big things, Cheezbombs, Doomwheel, etc. 13th spell is worthless against cav armies.
Orcs: 12-18(3 Characters, maybe?) knight units in lance formation will out rank any cav in the game and most infantry units too and all core knights to increase number of units. Lv 4 Prophetess with the feedback scroll to counter magics. small units of 10 MatA's and MY units to park on top of any fanatic/mangler and suck up the hits. Large units of MatA's(50+) w/Prayer Icon to pit those attacks.
I hope this suggestions help. Remember, sound tactics will always beat an op'ed list so play smart and you should never lose again.
After a particular boring day at work, I came up with this list against the Orcs. C&C welcome, although due to restrictions in the campaign we're playing, a fully mounted army is almost a necessity.

Also your only infantry is a single damsel i believe. She would fit nicely in a unit of bowmen with braziers. They are ace against regeneration and they re-roll when shootin at garissoned buildings. Both the hellpit abomination and Trolls have regen. They're a big threat against your knights, so the peasants could be well worth the investment.

Ah I though I missed something! Entire army is mounted at the moment, I've never been able to make much use of foot soldiers in the past.
The Orc army I'm up against is also fully mounted consisting of a couple of large units of spider riders, wurzaagg in a unit of boars, a couple of mounted sharmans etc. The biggest thing I have to worry about is that the unit of boars I'm against has a 2+ ward save against magic..
I made 2 simple trebs out of balsa wood and glue in a couple hours. You shouldn't assume you are always going to have bad rolls and hurt your army by avoiding units. Heck- go out and buy some new dice if you are that worried =)
I think you really should have some kind of shooting. I had 10 bowmen using the stakes to hold off 15 empire flagelents (sp?) long enough for my knights to kill great swords and then flank them.
As I said, these games are part of a bigger campaign, if steer away from using a fully mounted army I will suffer worse for it in the long run.

Well on the whole the list didn't do too badly, the main problem I had was that I was miscasting left right and centre and in one round of combat my Grail Knights managed to fail 6/6 armour saves and passed only one ward.
