Hmm tricky. You need flankers and bait to be able to get him and win. Never be afraid to flee from charges, so musicians and BSB are vital. Remember, if you stand your unit gets chased down and destroyed after combat, if you flee there is a chance they will get away and maybe even make his knights move into charge range of something else nasty.
I would suggest ambushing with a fair bit too. The lance is very hard to turn, you should be able to stick your units up his arse without too much trouble and have them fleeing towards your lines.
Common dragon ogres, I always find them the hardest part of a Beast army to bring down. So take some of them.
I play khorne i can really flee a charge.
think about it....... bretonians are all about that charge...right? why not utilize cover..... get cheap units in the front and flank with your heavies..... it's not immpossible to beat any one in warhammer or 40k.... it just takes good stratigy and experience... complaining about it won't help... find the weaknesses and explote the heck out of them.
Khorne? Yeah thats a different story. I wouldn't want to try a Khorne army against knight heavy Bret.. They could bait the hell out of you and crush you. Also, unlike other gods, you don't have magic to throw at them and weaken them first. I have no idea what you could do... Boost your characters and hope they kill a few knights I guess.
Bait units with hounds or other cheap units. Place them in a position where if they flee you can counter charge the in the next turn. Utilise your ambush rule... a Shaggoth witha great weapon is a good combo... use the darkoth staff to charge beast herds.... take a toolled up lord with the weapon that allows no saves.... take a mark of Tzeentch on all your heroes that can take it..... if he calls a challenge never accept with a hero, probably means he will maul him al over so sacrifice a champion instead.... take a slave giant.
Then again a love fighting beast armies; low strength, poor rank bonus, little armour, and low leadership. But the real reason I like fighting against them is because their generals put up a good fight, they use tactics and skill. And if I am going to lose I would rather be outplayed than moaned to death by some whiny runt complaining about my movement trays... i kid you not.

What I have suggested in the past is using a battle standard with the banner that makes any non daemonic unit within 6 inches of it stubborn. Mount the dude on a chaos steed for mobility and plant him behind a beast herd with a couple of decent flanking units. As long as the herd doesn't get massacred they stand a reasonable chance of staying around with being stubborn and havin the reroll for the battle standard. Then counter charge with minotaurs with a mark of khorne and great weapons in the flank.
When you are playing against brettonians you have to give it quite a lot of thought, generally inversely proportional to the amount of thought they have to put into a game.

You have the best flankers in the game. I forget what they're called, but they're your cheap infantry guys (beastmen). Not only do they skirmish, but they get to use their rank bonus (up to +2) once they're in hand to hand. They also get to magically move the better troopers to the front rank no matter what.
Take a couple of units of these guys and keep them BEHIND your army. Once Bretonnia breaks through your lines (and they will), charge them with the ungors and watch them lose the combat by 4 or so. Not bad for a unit worth about 150 points!
The problem is, Korne is probably the WORST army you could put up against Bretonnia. Your guys are extremely expensive, and will still die like slime when they get charged. Personally, I hate the Korne army (and I'm not that big of a fan of the Chaos army anyway). You're troopers are EXTREMELY expensive AND they can be forced to charge throw-away units because of the frenzy rules.
If you insist on Korne, you're probably going to have to break down and buy some demons. They can survive a Bretonnian charge because they don't break from combat (unless you fail your unmodified break test).
i dont play as Brettonians much, but i did once against a friend playing BoC- we never actually finished the game but he did maul me a lot by using beastherds doing flanking charges. Try and soak up the initial charge and then outflank the knights.
Word of caution, my Brettonian lord with the sword of heroes ( i think) managed to kill the Dragon Ogre Shaggoth in 1 turn so beware!
