Well, there's a tournament coming up in a couple of months... 1750pts. I'm taking my tyranids, but I'm getting a little tired of them and need a break. So, I figured, I'll just use my fantasy daemons and hope no-one objects to the square bases, which aren't that big an issue.
I'm using pretty much all the models I have in my fantasy list...
Fateweaver - 333
Blue Scribes - 130
6 flamers - bolt of tzeentch - 240
15 horrors - icon, instrument, changeling, bolt of tzeentch - 300
15 horrors - icon, instrument, bolt of tzeentch - 295
10 horrors - bolt of tzeentch - 180
10 horrors - bolt of tzeentch - 180
6 furies - 90
I'm slightly scared myself at how much firepower this army can lay down...
Now, I need some good advice on:
a) The list
b) daemonic assault order. Do I bring down the uber killy stuff first, or the furies and blue scribes? The plan is to bring down a unit of 15 and a unit of 10 in each wave so I'll have an icon for the second.
c) furies or screamers? I can see screamers would be useful as anti-tank but otherwise they won't really be doing much, and I play against some lists that don't take any armour (nids)

Flamer units are too big. They'll draw a ton of fire. You may want 2 units of 3 for flexibility.
You've got plenty of firepower, but what do you do about combat? Tzeentch DPs help a lot here, as do Fiends, Grinders, and the like.
For Daemonic Assault, I like to drop units with similar resiliency together to overload the enemy's capacity to deal with them. Typically, I drop all high T, multi-wound units together first to put pressure on and bring in the little guys piecemeal. Otherwise, I'll drop a boat load of models and bring in the 'ard stuff as I can.
Fiends are a nono. Pure tzeentch. I'm picky about that.
I guess I'll use your other method. That would give me this:
Wave 1 - 3 units of horrors, DP or screamers, 1 unit flamers
Wave 2 - fateweaver, blue scribes, 1 unit horrors, 1 unit flamers
Now... daemon prince. I might add this, or I might not. If I drop the furies and bring one unit of horrors down to 10-strong and drop the instruments in the horror units, that gives me 185pts, which can get me this:
Unholy Might (or would daemonic gaze be better?)
Now to go and convert myself something.

Tzeentchy Princes typically work with Bolt and Gaze. 160 points, still good in assault, but a potent shooter and tank buster.
Furies do have a use, but it's mostly tying enemies down and screening, where 6 really aren't all that useful.
Screamers are great against heavier tanks, and if there are no tanks they perform similar roles to Furies. Screening and tying enemies down to buy your shooters more time.
If you bring the DP, then I would drop him with Fateweaver and some Horrors and the Blue Scribes. The second wave can be Horrors and Flamers and Screamers. Make the most of those re-rolls by getting Fateweaver in ASAP and use Horrors to draw fire. Don't forget to run your Horrors upon landing to spread out and avoid blast templates.
So, is it better to run with them than shoot the turn they come in?
I gave the DP flight because, if he's going to be my CC element, I want to get him there as soon as possible. I've seen what a DP can do to a tank or unit in combat and it ain't pretty.
