So far I've been play testing small (<1000 points) daemon armies and have put together a few bigger lists on paper. But after a recent model building frenzy this is my first decent sized list for stuff I actually own:

Trying for something that's competitive and fun and that I can potentially take to local tournaments. First wave is GUO, 6 Fiends, 7 Plaguebearers with an Icon, 6 Horrors, 5 Nurglings and the 2 Tzeench Princes.
I have 4 more Plaguebearers (1 with an icon, 2 with the pointing finger for Noxious Touch), 5 Nurgling bases, 3 Flamers, a winged Daemon Prince (looks slighly Slaaneshy - purple wings and skin) and 3 Daemonettes built. I'm still building a couple of Slaanesh Chariots and plan to swap those in for the GUO when they are finished, but can't deciding what to use for Fiends. My normal Fiends are daemonette/spider conversions, but these don't look right pulling chariots. I'm looking at using either real fiends (expensive) or cold ones (not very Slaaneshy without lots of conversion work and still probably won't look right if I ever get round to repurposing the daemonette/spiders as Seekers and buying some proper fiends). Either way they don't match my current Fiend conversions. Anyone got any suggestions here? I've used Tomb Kings chariots with the Masque (replacing the the two headed mask thingy with a whip). Unbuilt I also have another 25 Daemonettes, 10 Horrors, 2 Screamers and enough bits to make 6 more Fiends. I'm also wondering about buying a box of Screamers and building a couple of Tzeench chariots.
The Nurgle Prince is the Nurgle Daemon Prince model with Zombie Dragon wings and the two Tzeench princes are normal (slightly reposed) Daemon Prince models with Lord Of Change heads, so couldn't easily be made into anything else. Not that I'd want to since I'm quite pleased how the conversions have gone.
So any suggestions, changes or advice to the list? Also what about my suggestion for the first wave? Any ideas what to take out for 1500 point lists?
The only suggestion I have is you might want to drop ironhide from the DP of Tzeentch (as it's only a small difference in saves), and instead use the points to either add more bloodletters, or add a small unit of either flesh hounds or seekers.
Normally I'd probably agree with you on the iron hide. But at the moment the two Tzeentch princes are my only reliable long(ish) range anti-tank, so my opponent's best strategy is to initially concentrate fire on them. The most effective way to take them down will be something like rapid fire bolters and iron hide increases my armour save here from 50% to 66%. Perhaps I ought to swap the Nurgle prince with the GUO for the first wave and give my opponent something even more big & scary to worry about (though if it were me I'd still concentrate on killing the Tzeentch princes first). And I don't have any hounds, seekers or more bloodletters, so the only thing I could do at the moment with the points is more plaguebearers, nurglings or another flamer.
Once I have some more anti-tank (Tzerrald charriots, more horrors, a third unit of fiends, etc), I think I'll be safer removing the iron hide and spending the points on something more useful. Also once I have a third unit of fiends (not for a few weeks, since allthough I have all the bits, the conversion takes some time to do properly), I'll loose the flamers and icons.
I'll be playtesting against Orcs this weekend and won't have time to build anything before then so I'll get to see if the iron hide makes much of a difference against the dakka they send my way.
For the Sherralds, I've gone with proper fiends (the only four I have, the rest are conversions). Wondering if I ought to model an icon on to them as well? It should look better and if I don't want to spend the points (probably most of the time), I can claim it's just a normal banner or standard. Would this be allowed for tournaments or would I always have to spend the points for an icon if it's on the model? Anyone out there use Sherralds to hold icons? Do they work better then plaguebearers? Or are they only useful for suicide bombing in flamers which I won't have anyway since there will be no room once I have three units of fiends?
I generally only put icons in plaguebearers these days. Nothing else seems to last long enough. That's not to say that the other troops or chariots are weak or vulnerable, but the icons give my opponent extra incentive to go after them. Plaguebearers are not only rock solid, but also fairly unassuming. Still, if you want to give the herald an icon, then go for it. Even if you decide to take away the upgrade later, the icon will look great on the model, and you could always say it's just a decoration, and not an actual icon, if you prefer.
My icons go on units of 10+ blood letters, blood crushers and plague bearers.
HQ- Good, if you want points, musk isnt always necessary.
Elites- Good, although I prefer blood crushers (because I run a fate crusher list)
Troops- I would actually drop a couple plague bearers and that instrument, then add more horrors.
The nurglings are really only good in epidemus lists. I would probably drop them too.
Heavy Support- Id drop Touch and add unholy might. if you want to add more troops or a fast attack slot you can drop hide from the Tzeentch princes and breath from the nurgle prince.
