Also if anyone could help me with playing tips. I field my skulltaker with my letters all the time, which is why i think a juggernaught is a good idea, if i start fielding him with the crushers does he need the steed? how do most people use him?
I really think i need another fiend but not sure where to take the points off!
I would like to make this list work as much as possible as i have alot of these models as it is. Tips to help make it better however critical is good :p
This is a little to all over and you have units in the wrong amounts. I'll start at the top.
Thirsters are really good but in terms of need, I like HoK or HoT for HQ slots. HoT with Breath, MoS, Chariot and Bolt are an insanely good investment for the points. You have potent anti-MEQ and anti-armor with good speed for not much over 100pts. HoK shine with a nice unit of Crushers to play in and are good for separating and chopping an extra vehicle and providing Walker defense. Skulltaker is good for any list with a nice Crusher unit and has many good matchups in competitive settings.
3 Fiends, way to few. 6 or none, you need the wounds and you need the attacks. It really is 6 or nothing in reality. Crushers are better with 4-6, 4 gets you the maximum complexity (always use all 3 upgrades, always) and 6 gives you a big bad unit that has many uses. Flamers I think are good but I like more, because they're only T4 and W1. Honestly Demon Elites work best when you spam one thing, be it Crushers, Flamers or Fiends. Because of how Demons deploy, you need reliability whenever you can get it.
Plaguebearers are a bit to high, they're glorified Objective squatters. Just take 5, hide them for as long as possible or worst case, go to ground always. They hold you objectives and up your unit count to get more models initially. Horrors work best in 5 man units as well, just get them for the Bolt. They're made out of paper against shooting and assault, don't buy more than you need. Bloodletters are good, they work well from 7 to 12.
Run your Grinders the same way, either all one Gift or all both Gifts. There's way to much diversity in this list, it gives your opponent to easy a threat list and will leave you without the tools to win. The Prince.....way to many Gifts. If you want a shooter with some light assault powers, go with Tzeentch. If you want all infantry killing, go with Nurgle. For a competitive lists those are the two best builds for a Prince if you take one.
Overall you need to build more redundancy and have specific units you can look to for specific jobs.

I dont think HoK are worth their points, i would rather have another HoT on chariot
drop the flamer for more fiends
drop the horrors in size to get more bloodcrusher
drop the two soul grinders and get two daemon princes with MoT and bolt, for the spare parts make the slaanesh prince into a MoN with wings, hide, touch and cloud, he kills anything with a toughness value and most things with and amour value. I've tried running soul grinder and it does not work mos tof the time, way to squishy and way too little synergi with the rest of the army...
that's what i would do...
HQ: The first two are great, ditch the skull taker. He costs more than 3 crushers and is no way near as good or as ressilient.
Elites: Flamers are great. Fiends and crushers are good but need 4-6 of each so spend points here.
Troops: All fine.
Heavy: I agree with sirholy about the grinders. I love the nurgle prince design too (with gaze on top) but I do like the pavine and its effects with the flamers. Take one of each..

Ok what about using 2 3 man squads of flamers and 6x Fiend squad. im not very experienced but i want an army that can take on all comers fairly well and maybe get competitive. so is running 2 soul grinders too easy for the opponent to kill. would i have to run 3 to make it work? Should i get BCs instead of fiends and use skulltaker with them. The only thing im not so sure about here is my heavy support and elite choices. im afraid i have too little AV.
