i'm semi-new to Warhammer (played ages ago) and decided to start again with some friends.. i chose DE as my army of choice (always liked the lore)
Problem ... My friends play Warriors of chaos, Vampire and wood elf (we mainly play for fun)
I decided on a 2500 point army - wanted a high magic army with bite
Supreme Sorc Lvl4 Shadow, Dagger
Sorceress Lvl 2 Dark
Pegasus BSB, Pendant, Soulrenderer
17 Crossbows, Champ, Mus, Shield
25 Spears, FC, Banner of Dicipline (bunker for mages)
14 corsairs Champ, Mus sss
6 Shades, Extra HW
1499 pts. (well, it looks ok, but worried about the 'bite' bit)
I handled the Vampires reasonably ok (occams and hydra) but my other friend loves his large units of chaos warriors, and it's these large units that are giving my army a headache....
Any tips on how to deal with them? (i was thinking of removing my extra mage and harpies, then adding in some more corsairs or blackguard)
At a glance, the unit sizes of your Corsairs and Spearmen are a bit on the small side. Spearmen are effective in 30+ (Slavetrain formation - 5 wide and 6+ deep), whereas 15 Corsairs aren't robust enough. 20+ is where you want to be (or in a Horde of 50, running 50 Corsairs and 50 Witch Elves in one list is hilarious) with Corsairs.
Unfortunately large blocks of Chaos Warriors are one of the hardest things to shift. It is possible to kill them off bit by bit by attrition through Combat (although best avoided...it took 20 Executioners, 20 Black Guard, 35 Spearmen, a Master on Chariot, a Dreadlord with Executioner's Axe and a Cauldron buffing to kill 50, an Exalted Champion and Festus at 3K: I had 20 Spearmen, the Cauldron and the Dreadlord left after it, although it was one unit after the other into them). The best methods open to your army are Mindrazored Spearmen/Corsairs...however you will lose a lot of them, the Hydra (it needs to hit in the flank though to minimise the attacks back at it), or casting Miasma on them to reduce their Initiative and then casting Pit of Shades on them with your Shadow Mage, all the while peppering them with Crossbow fire.
Also, Mindrazor is a good spell, just don't get hung up on it. You can't rely on only it to clear heavily armoured stuff for you (Bolt Throwers, on the other hand, will. You just need 3-4 of them at 2K+).
Also, the Champion for Crossbowmen isn't really worth it (I do take them in my big Crossbowmen units though...but never use their BS4...doesn't matter when you have units of 30) unless you have a Sorceress in with them so the Champions can get thrown in the way of challenges.

Some suggestions from me (fairly new still but play solely against WoC right now)...I'd add the usefulness of a lore of metal sorc I took out five chaos knights with one magic missile attack last night) and bolt throwers...even the six shots with minus 2 armor save can cut through a lot of their guys
I am mainly using rxbow men and 2 mages but want to include a core of fighters... black guard x 30? or corsairs? (although i feel the bg would be stronger)
black guard seem to work fairly well for me though they are a little bit of a gamble too...sometime i kill off enough with their hard hits to be ok but other times their non existent armor and fairly high point cost bites me in the butt...ive recently gotten more interested in executioners over black guard but ive only used them once so i need to try them out a few more times before i make a true decision
