i want to start collecting an army that can crush the new daemons, is this the right choice and what units will be key.

any army can crush any army depending on what they do.
a) how many points are you playing
b) what do YOU want to have for your army
c) what type of daemon army? (undevided? khorn/slaneesh? Tzenetch/nurgle?)
d) what type of teraine do you usualy play with (i find this is very important)
Painting: 20 quarrelers
Slayers are an obvious choice, as well as hammerers led by a lord (or rune of courage)
most daemon players are going to play magic heavy, so runesmiths with spellbreaker/MR of balance are going to be mandatory
Beyond that, S7 BT for chariots, organ guns for all the skirmishers and anything that can up your combat res results (rune of battle, stoicism, BS is good.

The slayers i agree with. TBH fear is not that dangerous for a dwarf. with LD9 across the board we usualy won't flinch from a charge or fail to charge, the only time that fear is a problem is when we are outnumbered in CC and loose combat. so to prevent that a) have large units b) have strong units (Hammerers/GW warriors) c) have resilient units (hws longbeards, ironbreakers)
S7 for chariots not many chariots runnin around in most Daemon lists but i usualy tool up a thane with a GW and (MRoK, RoCleaving, RoSS) gives you Str7 with +1 to hit great for taking out chariots.
Skirmishers? i havn't seen any skirmishers in Daemons except Flamers and nurglings. so don't worry to much about those.
Shooting is good for daemons. an OG or 2 and a Grudge or 2 can really help as they don't have armor saves and their ward is permenant now. just overwhelming them with shots is the way to break them.
Painting: 20 quarrelers
I have had little trouble with Daemons so far. Load up on Magic Resistance and Spell-breaking ability and then shoot them to pieces. The rest is just firing solutions.
WHFB: Dwarfs || WH40k: Imperial Fists, Necrons || WM/H: Trollbloods || BFG: Necrons
I faced quite a lot of them recently.

Dwarves are one of the most resilient armies IF you bring enough line troops, and depend less on expensive characters.
So... would lots of Thunderers/Quarellerers + magic resistance be best?

I enjoy my bog infantry armys wich seem to do well against everything as long as you have some reasonable range to back them up (I take organ guns, GT's and thunderers). Ive also recently taken a liking to the hilarity that is miners!!!

Ok, i'm not a dwarf player, well i hope to be soon, but i do know a fair amount about daemons.
1. Flamers are to be worried about, they are very powerfull, but organ guns are perfect for taking them out.
2. Watch out for bloodletters, they are rock hard in combat and have killing blow, be carefull.
3. As has already been said most daemon players go magic heavy but with a runesmith with spellbreaking at 1k points you should manage.
