I'm starting Dwarfs and I'm going to be facing a very knight heavy Brettonian force and a cavalry based Empire. How do I deal with these fast moving enemies? I have the BFSP box and the Brettonian army will be based on the battalion. Not sure about Empire

Ironbreakers are your best friends then imho. In general I think no dwarf player should go out fighting without them. If you want to stop those pesky charges either put up some serious armour (you really just need to hold off that first charge... then their strength won't do much good against your T4).
BFSP force will definitely need to be extended: trade your gobbos for more dwarfs. I would definitely try and play with Organ Gun and alternatively with Gyrocopter and good number of thunderers (anything to slow them down while you gun them down).
Neither regular warriors nor miners from BFSP will help you much in this case I'm afraid...

ORGAN GUN -3 to saves str 5 they still would have an ok save but some still will die. Flame cannons could help (empire ld 7 bret ld 7?) they will fail some tests and flee. To stop fast cav gyrocopters will annoy them to no end. Grudgethrowers can eliminate large cavalry units with no armour saves.
The armour save of the Ironbreakers will be reduced to a 4+ against normal knights and 5+ against characters with lances so I would not suggest relying on armour (yes armour will help but its not the be all and end all of combat).
I would suggest loading up on static combat resolution, so big infantry units of 20 with banners. A sprinkling a few Ancestor Runes, Runes of Determination and Runes of Battle on unit standards would be most useful. I would also suggest a Hammerer unit and a BSB to ensure your line withstands the charge. A Thane with MRo Kragg, Ro Fury and Ro Snorri would be a good knight killing machine in protracted combats.

There is something everybody forgot, boltthrowers!
Against the empire knights it won't help much, because those are most of the time in 1 line of 5 or 6 and you can only shoot 1 every time. But Brettonian knights are nicely ranked in big lance units and you can shoot 3 of them. Boltthrowers alow no armoursave, so the 2+ save ( they have barding right? ) won't bother you. And units of 6 and 4 aren't that scary anymore
One thing to remember about the Brets is that they get a 5+ ward save for attacks of S5 or more. So they all have something to defend against cannons and Bolt Throwers.
Though a stonethrower won't hit right on target quikly ( if it does, it's a joy! ) , and missileunits leave them with something of a 3+ save A pair of boltthrowers is cheap and can kill quite a bunch, 5+ is still a low save. And a cannon is even better because if you can guess a bit, it won't miss ( my boltthrowers seriously always mis, always 1's and 3's ( never 2's :p )) and the cannonball doesn't stop if one passes his wardsave.
In close combat, if you hold them the first round, you can win after that. Their normal str 3 dosn't really put a dent in you blocks anymore. Use runes of determination to hold the first round ( breaktest on 1 D6 ) and grind em down after that with your combatres.
