I'm picking up Empire again after a couple years. I started with Empire when I first began playing. After using primarily Dwarves and learning all the tricks of the trade with them, I'm confident I could wield Empire effectively, or moreso than I could when I was a newbie. Here's a quick 1000 point list for use probably against chaos or Lizards, whichever my friend chooses.

I know all-knight Empire armies are usually pretty taboo. I was thinking about dropping one unit of 5 knights for some swordsmen with 2 FC dets. The Capt would be stuck in the White Wolves and the Priest in the 5 Knights with the Banner of Valor. All deployment would be MET-C dependent (mission, enemy, time, terrain, troops, tactics, civilians). I like to bring real world military experience to the tabletop Lemme know what you think!

Hmm... I'd agree with dropping a unit of Knights for some Swordsmen, rather than taking two Free Company detachments how about taking one of those and a detachment of Archers? You're awfully low on missile troops and I think you may struggle a bit. I'd suggest knocking the unit of Knights Of The White Wolf down to seven men and dropping the Outrider in the Pistoliers, hopefully that'd free up enough points for a unit of Crossbowmen or Handgunners.
As it is I think it'd be a blast to play, it's just for very flexible.
After a brief read-over, I don't see any particular issues with this list, except for the fact that you've taken the Banner of Valor twice. Correct me if I'm wrong (which is highly possible) but I believe that a magical banner, just like any other magic item, can only be taken once. Also, I'd mention that it might be worth taking a repeater pistol for the Outrider, if you should be able to find the points. Doubling the number of shots he's capable of putting out (at a higher BS than the pistoliers, I might add), has always seemed like something of a good deal to me, especially given how relatively cheap the upgrade is.
Here is what I think.
To be honest i wouldnt make a list like that against either lizardmen or chaos. Knights are cool, but with relativly small units of knights you wont be able to destroy entire units of chaosarmour/heavyscaled opponents. Should you manage to win the combat resolution, both chaos and lizard are in general very very hard to break. Im affraid the chances that your knights wil be stuck in combat for many rounds are high, and fighting against big blocks of units without ranks or the benefit of the charge your knights will get they ass sorely kicked. In my oppinion that list is probably the worst choice against those two kinda opponents. Now i know that you're playing a "friendly" game, but you're really just handing him the victory.
What you should do though:
Guns! Empire has so many guns. Chaos has none. Lizardmen has almost none (well blowpipes and thats it). Get your hands on a cannon, effectivly stopping your opponents knights/stegadons, get some handgunners canneling out that heavy heavy armour that your opponent has. Get some blocks of infantry and tie up your opponents for many rounds in combat with a high combat res, so that the 1 unit of knights you have will be able to flank and hopefully be then breaking the almost unbreakable enemy.
All in all. Less Knights. More Guns (warmachines also)
