So, my friends and I started playing 40k about 9 months ago and, while I was out of the country for 1.5 months in June/July, they all also started playing Fantasy. They've been bugging me and bugging me to join them, so I've finally capitulated. Luckily, I have a bunch of empire stuff I got on the cheap and a whole lot of guard things to proxy (Steamtank with side sponson heavy bolters...).
Anyway, things have gotten a little bitter and "grudge match" like in fantasy, so I was hoping to come into their group with at least a basic understanding of what not to do. They mostly play 1k. I have a few questions...
One friend plays magic heavy vampire counts and likes to panic his opponents into zombies that he has raised behind their lines. Vs magic vamp counts, is there any point in taking a wizard or 2 versus a list like this? Will my magic phase just get swamped?
Are knights worth taking in a group of 10-15, lead by a priest? I remember once reading that you should only take them in groups of 5 to flank charge, but I only have about 30 infantry (1 block) so I was hoping to take advantage of my 18ish knights...
And finally, we have a lot of good looking items. But, I also remember reading that kitting out an empire hero to kill anything at all was a bad idea because everyone else's heroes (orks, dwarves, vampire counts are the 3 armies I'll be facing) are so much better.
Are flagelents perfect to take vs anyone but the dwarf because they wont get shot up?
And finally, what am I supposed to do against a 1 vampire 1 vargulf list at 1k points? Is there a trick we have beyond 2 cannons? And if its the speculum, a) will that work on a vargulf and b) who do I put it on? Pegasus hero?

A warrior priest is a good choice in any point size, due to his hatred rules, the dispel dice and, against VC, his soulfire ability.
Also, i wouldn't speculum the warrior priest, if you truly wanna go for the speculum, give it to a simply outkitted mage. The warrior priest you wanna have in a unit of troops, some cc statetroopers or greatswords as these can really use the WP higher LD (in the case of statetroopers) and the Hatred (statetroopers & greatswords.).
Having a warrior priest on his own isn't really worth it, but it's handiest if the speculum is on a free roaming character so you can position him for maximum swappage.
Perhaps you can tell us what you got in models? Advise could then be given for an armylist.
Got a "good" rumour from a GW staffer? Forget about it, LO'ers know more than any random GW shop staffer.
