Infantry blocks trump magic and flyers. The Bloodletters could prove problematic (to say the least) but they need to kill 4 rats in one turn to draw the combat (assuming they don't take any casualties themselves which is unlikely looking at the number of attacks coming from that Plague Priest...) and they really need to break any unit they engage in 2 rounds or face a flank charge.
Note: This game could have been won far more convincingly by the Skaven if they had taken but one ratling gun. Wait, he's in my pool? ...er...ratling guns suck...
The thing about this battle is, the Herald has the master of sorcery power, meaning he can pick any lore in the game and choose all the spells from it. If he were to pick lore of fire, and cast wall of fire, he can redirect the skaven army as he chooses, as it is unlikely the skaven players magic defence will stop him.
In addition, a flying fear test will break the skaven eventually. This combined with a march block and the magic will do some horrendous damage. The plague monks won't break, because of frenzy of course, but the slaves and clanrats will break eventually, especially if there ranks are being thinned by the horrors magic.
Combine this with a killer charge from the letters, and you have a good win for the Daemons here.

Against most horde armies, Id say Demons, but against Skaven, with a rapid movement of their own, the can close with most of teh Chaos units quite quickly. 65 skaven rnf models - more than double the number of demon modles, and the skaven units are tar pits due to the large numbers and the enhanced leadership as a result
SKAVEN have it - though against an army with effective war machines, I'd probably vote against the skaven
I want to hear from those of you voting for Skaven how the bloodletters could possibly be dealt with. I'm not so sure that numbers alone can have them beat the beasts in combat.
Edit: All right, after seeing how brutal the plague monks can be... I'll have to swtich over to Skaven. I still think this is a really close one, but 66 models is a lot to handle in a 500 point list. I still think the daemons could win it if played properly, but I sincerely believe the advantage lies with the rats, and therefore my vote lies with them. (I'm just glad I didn't have to face either list this time around.)

the plague monks have frenzy and add hand weapon giving them 3 str3 attacks. even with the demons 5+ ward having 16 attacks from the front rank will be a wallop of hurt.
not to mention the skaven would have outnumber, 3 ranks and a banner. 5 static CR so the demons would have to do 6 wounds to beet me in combat (i have music they don't)
for ginger my plague preist is also a mage so i have 3 dd and he has 4 cd. not complete superiority so don't count my defence to thin.
for Kroxigor. if i had a few more points i may or may not have possible or proboly not considered the posibilty of maybe doing that which is what you sugested in the case of what you were thinking. but with the situation arrising of what it was the idea of having the tools of which was mentioned in the case of following prior to this then there is a chance of a situation arrising apon which we previously discused in this situation.

I hate to vote against Daemons (my own army), but I don't think they can break those Skaven before getting ground up themselves. Bloodletters are good at ripping apart armored units, but against skaven he needed Daemonettes, and lacking that kind of multi-attack infantry he's got no way to win vs. the blocks in combat.
Magic can help, but the Skaven aren't completely defensless, I think the game would live and die on the magic phases of the Daemons, but I think that the odds are in the Skaven's favor.
