Does anyone have any good tactics against those close combat hating freaks, tau, because when ever i play them, i get shot up by there noobish troops. Come on , Strength 5 bog standard guns? Thats killing us on a 3+!

Killing? Wounding you mean , I think you need to be more specific tau come in many forms. What is giving you the most trouble.

I've been chewed up by tau alright, but I've also seen a single unit of 10 khorne berzerkers chew through an entire tau army in a few turns. You need to really use cover, and focus your fire on there big guns(Suits and tanks, those little stealthy guys who's names I can't remember but who have marker lights are also bastards).
Get into CC as soon as physically possible, don't pause for a second to get in a firefight, unless you are definitely going to win(Unlikely against Tau)
Deep striking or summoning directly into there midst works well, and whatever you do, don't just run straight at them.
The best thing to do I find is attack on two fronts simultaneously. Then beat him to a bloody pulp in hand to hand with whichever front he doesn't concentrate his fire on.
This is pretty generic stuff, but good to keep in mind when divising your strategy.
I can resist everything except temptation.
Some info on the typical Tau army you face, and the Chaos army you field will make it much easier for us to offer suggestions.
Even with a boatload of pulse rifles it is hard work chewing through an entire marine squad. Even though Firewarriors wound your guys on 3+ your bolters also wounds firewarriors on 3+, and your guys are more accurate. In a straight up firefight you will find that regular Chaos Marines do well against firewarrios. Point for point you shoot just as well as he can.
Getting into cc is ofcourse important since that is where you really have the upper hand. Speed is of the essense here. Spending 3-4 rounds footslogging towards the Tau line while taking fire every round is suicide. Bikers and Raptors work well here. Even 2-3 bikers or raptors getting into cc can roll up a Tau line.
One of the best weapons vs Tau is Lash of Submission. Force their pesky firewarriors to move out of cover and preferably into assault range. A winged sorcerer tagging along with a group of Raptors can do great. Deep striking terminators can also be very effective. A squad of 5 with a couple of combi meltas and a heavy flamer can seriously put some pressure on Tau without costing you too much. A Heavy flamer eats through firewarriors and combi meltas are great vs crisis suits and hammerheads. Just don't expect the termies to survive very long after deepstriking. So pick your target!

Overwhelm your opponent with a lot of high priority targets. Don't put all your eggs in one basket. Your bound to lose some vehicles, but having a high number of them should facilitate your marines into c.c.. Something like this:
1 raptor squad
2 tank busting predators
1 heavy bolter predator
I use the predators to shield the rhinos, then second turn blow smoke on the rhinos. Works very well.
Having a single chosen squad with lots of plasma guns also redirects Tau infantry weapons away from your c.c. units during the 3-4 turn. Try and put them behind 4+ cover and bring them out in conjunction with the rhino assault.

Against TAU :
1 - Obviously : close combat will be more effective than ranged combat
2 - Prioritize :
a : Ranged units -> First kill all the suits if you can see them, than kill all the tanks
b : Close combat units -> ram through their Fire Warriors and try to lock down their suits
3 - Daemons + Bikers could be an excellent option
4 - Use cover
5 - Low leadership = will flee easily after 25% casualty, will have hard time to rally
6 - Ignore point 2 if he use a heavy mechanised Tau army : Kill all vehicles first then charge
7 - Infiltration and deep strike work fine against them
8 - As a general rule, use a lot of troops. Your troops are better than their best elite.

Basically, one of the three things you want to try to achieve are: Speed, Resilient, Model Count.
Against Tau, take lots of fast moving units and get on their face as soon as possible. Tau usually lose if you can reach their gunline on the second turn with Rhino, Raptor, Bikes, etc.. You would want to try counter their basic lowest strengh 5 weaponry with higher toughness units, Icon of Nurgle works great here since their plasma weaponry is only strengh 6.
Like what's being said, another way to fight Tau is to take lots of resilient units to absorb all the bullets while be able to still march up every turn. It will definitely put alot of pressure on the Tau players. Especially when you hide a Lord on Steed (Cavalry) behind a wall of sturdy meat shields... once that Lord goes into combat, with luck on your side you may just have win that game.
One thing to watch out for when fighting Taus, take marines instead of vehicles. If you can have an entire army of pure non-vehicle models, then you would have a greater advantage over your opponent. Their 100pts Broadside (with proper upgrades) with railguns are now useless. Also, Lash of Submission works perfectly against shooty army like Tau and Imperial Guard, judge by your distance to your opponent.. if you are within 18"-24" to the unit you wish to charge, simply wail that unit behind some sort of area terrain so it loses its ability to return fire on the next turn... pinning test works great on Tau too because of their natural low leadership is what really hurts them.

I've not fought Tau properly yet with Chaos (Khorne army), but I have always had problems with my mates Mech-heavy Tau army with normal Marine and Imperial Guard armies.
Even with a troop heavy army, the Railgun has a S6 AP2 Large blast sub round doesn't it, so still very effective against Marine Troops (might not be AP2, can't remember)?
Rhino's seem wholey unuseful as well, as those suits tend to pack lots of S6 weapons with plenty of shots, ideal for taking out low armoured transports.
I guess my first priority would always be his Hammerheads with Railguns. Couple of predators / dreadnoughts for those twin linked lascannons seem like our best hope. Or Deep striking terminators with some combi-melta's might do the job.
I'm less worried by Firewarriors - if you can stay mostly in cover shouldn't be too difficult to get into them. Except for that Devilship transport shield....
Try using a slaanesh army. My personal favorate is using lash of submission to pull there units closer for charging or grabing there battle sutes with the rail guns and throw them out of line of sight. Also try using terain to run your possessed or some other marine unit with an icon and drop some deamons or 5 terminators with some heavy and combi flamers. Also rember that your rhinos and land raiders come standard with search light and smoke launchers so if your brave enough run your transport right up the middle and deploy your smoke launchers turn one so those S10 railguns can only score a glance at best.
