the codex rules say that nurgle units get true grit, which says that you can hold a bolter one handed, does that mean my plague marines can hold a bolter and a bolter pistol, or 2 bolters, etc...

Theoretically they could, but that option is not given to them. If you look closely at the chais space marine's entry in the codex, it says that a model is equipped with either a bolter or a bolt pistol and they also get a close combat weapon. It doesnt say that you can give them 2 guns.

It wouldnt really matter you do not get any benefit giving a model two bolters.

You can make them hold 2 bolter, or a bolt pistol and bolter ect. but in th eshooting phase you only count it as one gun being fired. and the reason they give you true grit is so that you can put a CCW, or somthing for show in the other hand

    yes.

You Can Have a Boltgun and ccw.

Having 2 Guns isnt that good. If they are the same, it counts as a re-roll if missed, and if they are different, then you can only fire one of them a turn.

You can give them a bolter and single handed weapon (pistol, ccw) but not two bolters as this violates the one two handed weapon rule......sorry.

no, it doesnt, thats the point of true grit. it makes bolters 1 handed. but 2 guns arnt good, as i said before you can only fire one at a time
