At least 2, 1 ends up bait for anti-tank weapons. They're cheap, very shooty, fleet, and hit like a train in combat. What's not to like?

Its all or none. If you don't have 3 you just have targets for your opponents av. 3 assures that they will be around for awhile. If your opponent has no way of dealing with them in CC, such as the tau then you can have an unstoppable monster ripping them to shreds.

I find two perform well enough for me. When it comes down to it, SGs target specific kinds of targets (most often open-field infantry, sometimes assaulting vehicles). There's really no need to oversaturate - you take what is necessary to kill that stuff in the area the SG can effect.
Lately I've been running two, and a souped up DP of Tzeentch (before you go off the hook at me, he's built for combat), which to be honest has worked rather well for me.
2 at the very least, soulgrinders are worth their weight in gold, they bring a lot of firepower to the table.
I use 2 soulgrinders and DP of nurgle!
I roll with 2, they are amazing
only reason i don't run 3 is because people call it cheese. I usually don't fill my other heavy slot but it would be a Tze DP
i've only used a soul grinder once and found the little fella performed nicely.
that being said, multi daemon princes are a much better alternative depending on what mark you give them. I have tested a 5 MC army at 2000 points and found they suffer greatly vs large squads, which im guessing soulgrinders probably wouldnt. Then again, soulgrinders cant boon in cc, which makes my opponents very angry when their commander/sergent with power fist becomes a sucky model on my side.

or i run 3 dp with various builds for fun.
