in the chaos daemons book it says all daemons are fearless but in the dh codex it says they suffer from instability so if i took and summoned greater daemon what would happen?
Thats a bit of an odd question and i thing that your getting confused with three codexs if your using Codex Deamons then they dont have Instability as the extra wounds in fearless deals with that. As for Deamons in the DH book the isntabilly will refer to the adverseries in the back of the book (pages with the nurgle orks). and as far as the summoned Greater Deamons that you asked about youd have to look at the CSM codex as i dont play that army.

Instability doesn't effect fearless daemons like those in CSM or codex daemons.
Note the grey knights still have the advantage of the force weapon that takes all your wounds rather than just causing instant death.
Also daemons take dificult terrain tests when assaulting grey knights so the daemons strike at Initiative one unless they also have offensive grenades.
Sacred incense, book of true names and the DH psy powers can still make them a formidable opponent for daemon armies.
