You get 7 in the box, and only 1 plasma gun.
I want 2 plasma guns, and the champion with a plasma pistol and pfist.
Does anyone have recommendations on how to go about converting the models to achieve this? More specifically what models to salvage parts from to minimize the amount of cutting and filing of the metal plague marines.

The CSM box comes with Plasma Guns and Plasma Pistols, you could buy a box of them and take the guns you need, and having extra CSM laying around isn't so bad either!

Often Plague Marines are converted from normal Chaos Marines. You can try that, Forge world makes some parts for helping in doing that. And or you can use plastic glue in a cloth to dab onto plastic Chaos Marines here and there to make it 'melt'. That will make it look more corroded when it is painted.

Has a lot of easy conversions and ideas for you to use making a Death Guard army. My suggestion is to buy at least one Chaos Possessed box, one CSM box in addition to the Metal Plagues you all ready have. Mixing the pieces liberally you should be able to make all your guys look pretty Nurgly.
You just need a spare plastic arm with a spare plastic plasmagun or plasma pistol. The standard CSM 10 man box is a good place to start. It also has a specific nurgle shoulder pad which makes a nice addition. Either buy a box or just ask around your gaming opponents for a chaos player who built his squad with meltas or flamers etc. You can even use a loyalist marine arm and plasmagun. once they are painted it is difficult to tell the difference.
