As the title says why? i dont understand it myself, the most common DP is ofc the mark of tz and bolt combo but for a few more points you can get a soul grinder with phlegm upgrade, why is this seen as a worse choice?
because if a demonprince gets shot with a lascannon on turn 1 there isnt a chance of him dieing, and because meltas dont get 2d6 to wound a DP, and DP have a save, soul grinders will almost never get a save, sometimes cover but very very rarely they are to big and in this age of anti mech people have meltas and anti tank everywhere
also its easier to deep strike a DP then a grinder
and they are cheeper

Its not durability thats an issure (soul grinders are immune to S6 and lower while DPs just dissolve to it). The porblem is that Soul Grinders suck in higher point costs because they're our only vehicles and when the game gets larger the more anti tank weapons there are. Also Daemons Princes are great when they have an extra 100+ pts of wargear, so when you get to that size of a game you can actually afford it.
I perfer soul grinders the key is not to just run one u need to run more than one run. Really they can be cheaper to run than a dp i always run my dp will iron hide and wings wich is like a 170 point. This makes them hard to kill and i like to use the mark of nurgle to the t6 is a pain makes most hit wound on a 6. i mean a soul grinder with phlem a larger blast with ranger at 36 inches at str 8 ap 3 is most instant death to troops and on top of that and has 4 str 10 attack an then 6 shots at 24 inches on the side and thats only for 160 points. yes the soulgrinders bs is 3 but it's really not that bad i use hit 4 out of 6 shots and i've had really good luck on my scatter dices. I've been playing dp alot more latey and they can die just as fast or faster than a soul grinder so it's really apples and oranges.
I always run both. I prefer to take the stance that I do not have to choose one over the other unless the game is under 1000 points - which never happens.
You really want to know why? A daemon prince fits into my case.
Eldar -APOC- 6500 Points
Chaos Daemons -Fate Crusher- 3500 Points
Grey knights - 1000 Points
I run 2 soul grinders and 1 daemon prince. People are weary about how fickle they are, but as a walker they are actually quite strong. You drop them and can move them into combat while blazing away with your shooting attacks. In combat all attacks are resolved against your front armour because its a walker (even a power fist still needs a 6 to penetrate) and you are getting 4+ attacks with a dreadnough CC weapon. Running one of them makes it a target, running two makes them overwhelming, and they are inexpensive compaired to a dreadnought or what a daemon prince needs in order to be effective. In my experience I would say they are the most effective unit in the daemons list given their point cost, but I'm sure thats just because of the way I run them. Running a Bloodletter army is extremely 1 dimensional, with the support of the soul grinders it doesnt allow my opponent to feel like all he needs to do is deffend against assaults: its keeps him/her on edge. Lastly IMHO they are the most badass looking models in the game so running two of them makes me feel really, really cool
