Tanks - Either Meltaguns in squads or Dreadnoughts with twin-las.
Monstrous Creatures - two words; Plague Sword.
Death Guard to have problems against Tau, to be honest, because their high toughness doesn't make that much difference. I'd advise getting some Plaguebearers against them.
Vehicles- Meltaguns, plasmaguns (lighter vehicles), meltabombs, powerfists, dreadnoughts, predators, defilers, huge a$$ daemon princes, krak genades, great unclean one.
MC- All of the above + plagueswords, dark blade, plague banner, tons of bolter shots, tons of attacks from squad. (eventually the dice will win).
Well, it's been already said but a Death Guard player will deal with armoured vehicule with meltaguns (my favorite), plasma guns, power fists, melta bombs and all the fire power a predator or a dreadnought can provide.
Of course you will need to get upclose and personal but a good amount of special weapon fire can replace any amount of lascannon fire if within the requiered 12"... The rest is left to our own tanks.
Against Tau the only answer to your question is speed. If you can get into CC with those shooting squads then you will have no problem winning. Maybe some rhinos will be what you need in this case.
Against Tyranid you need to seat tight and use rapid fire, take a squad of possessed with talons and a Daemon Prince geared toward CC to tie up ennemy units. A great unclean one is also great for that purpose. Nurgling are also good. A Defiler is also advised, there's nothing like a blast template against a horde army.
