Twin bike squads with Meltabombs on the champ have been doing well for me in taking out those pesky SM Landraiders. If I have the points, I'll put a Defilier with twin linked lascannons on him - or if i'm feeling really aggressive, a predator with twinlinked lascannons and lascannon sponsons.
My opponent is wise to my tricks (we play each other one or two games a weekend - depending on points) and I'm looking for other creative ways to blow up the landraider. He also typically fields two typhoon landspeeders (rending hurts).
Why would you put TL lascannon's on a Defiler. If your considering them put them on a Dreadnaught since the Defiler should be focusing on troops with the Battlewagon.
I usually just Deep Strike a unit of Obliterators and fire the melta guns.
I also use a unit of Havocs with either 4 plasma/melta with tankhunter

If you want another way to take it out besides bikers and the pred, you could get
oblitorater(s) and/or havacs.
My dreadnought with twin lascannons has more than a few landraiders on his concience. The defiler is best left for dropping that pie plate on the nastiest squad in range...
Heh, I tried out my unit last night, and they did great. I played them in my 3,000 point World Eaters list. I deep strike them behind enemy tanks and let them wreak havoc. They took out 1 land raider crusader, 1 vindicator, and 2 dreadnoughts. I lucked out on taking down the vindicator though, there was only 1 of my terminators left, and I got a nice extra 5 inches on my Blood Rage roll. I was able to take out the vindicator in that turn though. Overall, this unit may have won me the game, I only had about 300-350 points left on the board at the end of the game and all of them would have been easy targets for his vindicator, except for the Daemon Prince due to his position in cover, and that was also the only model I had left that could have taken down the vindicator. You may want to do a test run with some friends before working them into an army and putting your spin on them, and that is if you even want to, but here is one of my best anti- tank units.

I am curious. Now that you have used them in a game. Didn't you find 5 chainfists to be a bit redundant? Its hard to argue with your succes, but I still think 2 chainfists should be enough for the task at hand.
My fav anti-tank units are:
Pred with lascannon turret and HB sponsons - I know this isn't the best for anti-tank, but it keeps it flexible
2 Obliterators - Makes DS viable cos your not blowing over 200 pts if they die and I've found 3 to be overkill a lot of the time
5-7 man CSM squads with a lascannon, maybe with infiltrate
