I am thinking about creating a grenader/carapace armor vets army, is it a good idea?
What models should i use for the army?
if you do a search you will find numerous lenghty debates on this subject, what it boils down to is: some people like a lot of cheap fodder, other like their IG with a pinch of survivability.
You can use loads of models, look around the GW side, cadians can be argued to have carapace armour.
One last tip: introduce yourself in the introductions part of the site, it's generally appreciated!
Got a "good" rumour from a GW staffer? Forget about it, LO'ers know more than any random GW shop staffer.

And as HeZu pointed out, there have been many long discussions on this topic. If you are having trouble finding them, I'm sure someone could point 'em out, or just go over the basics.
My personal opinion is that I prefer a mix - mostly lost of cheap grunts, but from time to time you need a more solid anchor, which is where I use grenadiers or storm troopers.
As for models, go crazy - just look around, the GW online store is a good place to start. Typically, people tend to use kasrkin as their storm troopers:
It also depends on the style or army you are after. I really love the forgeworld Deathkorps of Krieg grenadiers, however they are a little on the costly side :
On the other hand, anything that looks different from the ordinary guardsman, a bit more bulky, with perhaps a slightly more dangerous lasweapon can make a good grendadier. Not that this is such an issue, as you could possibly have an entirely grenadier army! And, as HeZu stated,.cadians can be argued to have carapace armour
As for carapace vets, well, you probably have a lot more leeway there! Anything from throwing in some vostroyans, to adding extra armour plates to your cadians would probably work. (I'm taking the extra armour plates path with my skitarii veteran squads.)

Also, you should google "garfield minus garfield". Awesome.
If your thinking about creating an army using the special equipment: Carapace Armour it could help point wise if you did not choose any fast attack units. If your going to choose grenidiers I wouldn't get any stormtroopers but the idea with the carapace army vets sounds cool it will just eat up some doctrines though.
I can't really say I think an army full of Carapace armour is worth it...that means for every man with Carapace you could have two without...plus (excluding AP) it only increases each mans survivability from 1/3 to 1/2. If you need an elite unit to serve a special purpose, by all means. However, as far as equipting your whole army goes...I wouldn't. But good luck if you decide to.
Chuck Norris wouldn't stand a chance against Tana Umaga.
I am going to use grenaders as troops and vets with Carapace armour for elites. It is an elite guard theme I am looking for.
