I'm thinking of putting a Techpriest Enginseer in an armoured fist squad and giving him Melta Bombs so he can jump out and blow stuff up.
I'm going more on a fluff/cool factor look here but will it be anything close to effective when it comes to explosions?
If not, what alternative roles can I give him without giving him servitors because i can't afford it?

I'd go with a normal troop with a melta gun, if anything, because at least he can use it on the same turn he exits the vehicle. Actually, that would work very well, because as long as he manages to hit the vehicle, it's pretty much screwed (unless its a Monolith, or possibly a Wave Serpent).
Problem with Guard and meltabombs is that a lot of vehicles have heavy bolter-equivalents. Rough Riders can pull it off but troops are generally too slow to not get shot first and the Chimera is too vulnerable on the sides. Lascannons are much less risky and hit just as often, assuming the target vehicle is moving.
I've seen a Tech-priest be used as a countercharger but he always struck me as too fragile for that. Otherwise...he just keeps the tanks running. Best way to run him solo is as the Swiss Army knife he is, walking alongside a tank and heading off to pop any targets of opportunity and maybe force priority tests...can he take a plasma pistol? Well, the best use that I've found for the Techpriest is to load him up with tech servitors (as many as you can afford for the game) and sit him beside your basilisk or have him follow your Leman Russ around. Nasty hunter-killer missile take out your earthshaker? Lascannon immobilized your treads? The unit is now useless and doesn't count towards victory points, right!? WRONG! Techpriest is able to repair any damaged systems, and pretty effectivly if he's with a full compliment of servitors. As an added bonus, he's added counter-charge protection against deep-striking melta-bombers and powerfisters. Yea, his servitors are gonna get wiped in any sort of combat, but that just means the techpriest stays stuck-in for that much longer.
In short, hes just plain useful! Yea, he probably won't 'make his points back' in direct kills, but think about his abilty to enable his mechanical charges to keep on pumping out death far after they'd normally be down and out and no longer fullfilling thier roles. Alot of people scoff that he doesn't help out when the vehicle is destroyed, which is true. Though, its really annoying that all the opponent has to do to your 100+ point Russ is immobilize it and it doesn't count as a scoring unit. Techpriests can fix that, and I believe that that alone could be worth his points.
Can't afford the models? Take a few guardsmen, strip away thier lasguns, give them some tools. There. Makeshift servitors! (Or just stick a few guardsmen with him, your opponent should get the idea with a smidge of explaination.)

Meltabombing Techpriest no. Chimera running forward, dropping off full retinue and multi-metla servitors and screening the squad for a turn, yes.
Combat servitors might have limited effectiveness in certain situations. (I see them as a good necron killer for some reason.) But your better off with a Shooty-priest.
I'm mildly inclined to agree on the fix-it priest. Because he must START the turn next to a vehicle, it greatly limits his effectiveness, and at 85 points for a full fix-it priest, you could field another chimera. Best used, in my opinion, if you have a very expensive tank you are using and want to keep alive. Prime example would be a demolisher you're using to soak up fire.

get a refractr field in there, and give him honorifica, makes him MUCH more potent than he usualy is.

I really like the idea of combat engineers instead of servitors.
That just seems cool.
Anyway, I think 2 techpriest with 1 or 2 servitors each is good, and maybe a plasma pistol if you really want.
Sure a 2+ to fix it is good, but it costs that extra bit more.
