I am currently in a campaign with 3 imperium players against 3 tau players and have come to the realization that i have a very hard time killing tau. The guy using them is all about cheese and doesnt care about fluff at all. any help at all would be great he takes tons of crisis suits and fire warriors and always takes that damnable cyclic ion blaster thing.
Artillery/Ordinance and assault marines are your best bet. Assault Terminators in a Land Raider Crusader might be fun. Also sniper scouts are useful.
Infiltrating Tactical and Devastator squads might work, depending on terrain and tactics.

One thing which I have found useful against Tau in the past has been Whirlwinds you can keep them out of sight and blow up their fire warrior squads.
One thing worth trying are deep striking terminators... if I recall most of their vehicles have an armour 10 rear which means that even storm bolters can glance them from behind.
The Crisis suits are always annoying have you tried sending in assault marines or bikers? Bikers are proberly the best with their T5 just to annoy and lock up the suits and if you have a meltagun weilding biker will see one drop hopefully before you assault them.
If there are a lack of railguns you can always take a land raider.
There is nothing more annoying when your Wyches with Plasma Grenades get "Always strikes First" for their combat drugs!
Keep these in mind when playing against Tau:
1 - Space Marines won't out shoot them.
2 - The amount of firepower that Tau has is way superior to Space Marines.
3 - Any Tau except commanders will crumble in hand to hand.
Now to the tactics:
1 - Whirlwinds are really good against Tau. If you'll tailor your list to play against Tau, take at least two of them.
2 - Deep strike can make a Space Marine day against Tau. Assault troops, terminators or drop pods place your squad right in their face. Deep strike them in front of fire warriors and rapid fire them/assault cannon/flamer (pick your weapon of choice here). Most likely they will brake and run. This may be good or bad, depending on where you are, but at least you have one less fire warrior team shooting at you next turn .
3 - Bikes and speeders are really good. I normally don't like to tie my bikers in CC, but bikers can make a Crisis Suit cry in CC. Give the sergeant a power weapon or a power first and there is one less Crisis Suit in the field.
4 - If you want some shooting power, think heavy bolter. Predators with Auto cannon and heavy bolters sponsor, scouts with heavy bolters, assault bikes with heavy bolters, you got the idea.

If you want to go really hardcore versus tau try this-
You take a librarian (2 wound one if you like - it doesn't matter) and give him a near naked command squad - you can use a terminator librarian and command squad if you like.
Give the Librarian fear of the darkness.
Do that twice for a laugh.
Then take a fair few scouts with vet. sarges and teleport homers.
Don't worry with whirlwinds against crisis heavy tau as they don't kill enough - I would probably reccomend plain old tactical marines with plasma and heavy bolter.
Anyway - the scouts infiltrate and use their beacons for the librarins, they DS in and fear fo the dark the tau (LD test at -2) which is likely to cause most of the tau in range to leg it.

My friend plays a cheesy Tau army often composed of suits and Firewarriors and simply stands on his edge all day. It works, but its really lame...
You could always switch to Space Wolves for a day and let him have it with the scouts
Other than that, though, assault squads and bikes are my suggestion. Cover hop a lot.
Well since i play Tau as my main army and saw your thread im going to betray my tau comrades and give you a bit of advice .
First off could you tell us what kind of list your friend uses?There are basically three main types:-Static,which is basically lots of foot FW,broadsides,pathfinders,some suits.This is probably the worst army you can make,and only people who have no clue how to play tau use that kind of army
-Hybrid,this type of army uses few FW, mounted or not.usually at least one Kroot unit,probably 2 hammerheads ( in 1500 pts) and either a broadsides team or a skyray,Lots of suits (crisis or stealths) and a fairly cheap but effective commander.This is the most common type of list,at least among experienced commanders who use these forums,and is quite effective.
-Mech,this type of list is made up entirely or almost entirely of units that are either skimmers or mounted in skimmers.This means the list is usually made up of 2 or 3 FW squads in devilfish (in 1500 pts),2 hammerheads and a skyray (or 3 hammerheads),a commander,and a few suits,as well as some piranhas.This type of list is pretty effective but i personally prefer hybrid.
Anyway, if he uses static the advice given to you previously is pretty good,whirlwinds, librarians with fear of darkness, heavy bolters are all good agaisnt this type of list.You also need to get a large amount of CC units,doesn't matter which.But except if he isn't a good tau player he won't be using a static list.
Now if he has a hybrid list,you are probably in trouble.Agaisnt this type of list whirlwinds are probably not the best choice, same thing with heavy bolters.You need some very fast CC units (who can catch up to suits who move 12 per turn),some low ap high power weaponry,to ignore the suit's 3+ save,and maybe insta kill it,so this means you want a good amount of lascannons and plasma guns to back up your assaulting force.The lascannons will also have to deal with the tau vehicles,so take a good amount of them.Also, if he has kroots,he will probably infiltrate them in cover,probably woods,and use as a pillbox/speedbump unit.So he will have the unit sit in the forest and shoot,probably causing some damage,hoping you either spend time shooting them,which isn't a good idea seeing as they have a very good invulnerable save in forests,or assault them,which is also not good as they are pretty decent in CC especially when they get to strike first.So you basically want to ignore them while going for his important units (the suit's)
If he has a mech list,you're gonna want a lot of anti-tank.Assault units aren't as important,simply because there isn't much to assault.You want to force him to engage your anti-tank with his hammerheads and make him send his FW mounted in devilfishes to you. You only need a few CC units,but be sure they are VERY fast,that they move more than 6 in the movement phase.As the tau player will probably use a tactic we call 'Fish of Fire' which is sending your devilfish within 12 inches of a target,disembarking the FW behind the devilfish,rapid firing the target (unleashing 24+7 S5 shots) and since they are behind the devilfish and you can't go within 1 inch of it you won't be able to assault him unless your unit moves faster than normal.Try to take care of his hammerheads as fast as possible with your anti-tank,and if you see a piranha,kill it as fast as possible
But then again he probably has a 'cheesy' static list,so he shoudn't be much of a problem
-A tau, dark eldar and slaanesh csm player
-And always on LO chat..
Deep Strike Terminators
Land Speeders (armed to the teeth)
Lots of Rhino Squads (if they don't want to come to you go to them)-always take Extra Armor and Smoke on the rhinos and have two squads with just five men lead they way, alowing their rhinos to take the most heat and the others to close.
In short, Space Marine light armor is great against blues.

Like svalene, I am also mainly Tau, and I play a mech list. I have to say, the thing I worry about above all other things is having an enemy getting close, and if I were to beat my Tau army, this is what I would do:
Assault squads to the max. Give plasma pistols to as many marines as possible (two marines plus marine with terminator honours). Give the model with terminator honours a power sword just to help make hand-to-hand with our suits easier. Plasma pistols have the ability to damage our vehicles fairly regularly, and high-powered weaponry can become redundant due to our skimmer glancing if moved over 6" rule. Max out on assault marines as much as you can, use cover to move up on him, and leave him no route of escape. Oh, and don't deepstrike, coming in piecemeal will allow him to destroy your army piece by piece when it wouldn't be able to handle the whole thing at once.
That's actually about it. A chaplain with jump pack is a bit redundant as assault squads will eat any Tau Empire unit for breakfast, and librarian special powers won't really be effective against hybrid or mech list, and space marine commanders aren't really ever needed. Taking only infantry makes his railguns fairly useless, because Tau players pay a lot for each shot and will probably not make those points back firing at infantry.
I will say that drop-podding marine squads with a pair of meltaguns can be quite effective. A full squad will be able to block off an escape route, they're more than able to handle any Tau in close combat and the meltaguns will make short work of any Tau battlesuits or vehicles unlucky enough to be in range.
Honestly, from my perspective as a Tau player, I don't see how we're hard to beat.
My gaming group's new motto: That army you're using is overpowered because it hurts my guys, codex is broken and needs a rewrite.
Alright, this is how you do it.
You take two squads of termies.
One, shooty, to fend off any attackers that will shoot you.
The other, assault termies, that will tear their enemy lines apart.
Pay for drop pods, the'll come in handy.
