Okay, today i purchased two Catachan Officers for a new IG army I have been building. They are not Catachan Deathworld Vets or anything, I am just a wierdo in the sense that I actually LIKE the Catachsan models. But I am not really sure about a couple of things. Upon assembling the models and looking at them, I know what obvious weapons they have, but the secondary weapons have me at a loss. I have looked online and have looked through my codex and am still stumped. Maybe someone out there can help me out.

Ok, firstly, a few images or links to images would help us greatly in assisting you!
But, I can say that generally GW/Citadel figures 'officer' models tend to have pistol style weaponry. Not always, but generally.
So I'd say that it is likely to be a las pistol and bolt pistol for the second model.
but, until we can see pics it's impossible to state with 100% authority.

The 'big' gun is an old and weirdly modelled boltgun with the second being a standard laspistol.
So when I go to make my army list, he is just a Catachan Captain with a Powerfist and a Bolter? Right?
Yes. Although I would advise against equipping him this way, as:
1. The powerfist is not hidden (as he is an independent character he can be picked out of a combat and attacked as if he where his own unit, leaving him extremely vulnerable, ergo, not the best person to carry a powerfist)
2. The boltgun doesn't synergies with the powerfist (if he had a powerfist and a bolt PISTOL he would get an extra attack for having two close combat weapons which you DEFINITELY want when your spending so many points for the powerfist).
I would be inclined to agree that you should not stick a Power Fist with a Bolter, as of right now in 4th Edition. However, in 5th, Power Fists can never gain an extra attack from a pistol/close combat weapon. They only way to achieve an extra attack with a power fist (or a Thunder Hammer for that matter) is to be equipped with a second power fist.
That being said, a bolter is also a rapid fire weapon. A model that fires a rapid fire weapon is not allowed to assault in the same turn. I believe this holds true in 5th edition as well.
So, if you plan on sticking him with a stack firing squad, a bolter may not be a bad decision. If you want him to be more "assaulty" then that may not be the best choice.

Plasma pistol resembles a plasma gun in terms of curcylar tip with vents. Laspistol has pointy tip as that of a lasgun. Bolt pistol resembles a bolter.
