I have an opponent that fields the following:
10xPlague Marines with melta in Rhino (Deamon Possessed, Twinlinked Bolter, Combi Melta, smoke)
10xPlague Marines with plasma in Rhino (same as above with combi-plasma)
10xCSM with some heavy weapon
10xBezerkers in Rhino (same as other two, but just bolters)
3xCSM Bikers with Icon (for the GD)
Basically I can't slow down his list. His guys get to my lines b/c of the Rhino's and I can't really hurt much before it drops on me. (I also have almost uncanny bad luck killing DPs, I've seen 8 5+ saves made in row on the final wound but that's a different matter)

hmm. that's a VERY close range list, which guard are generally bad against. see about getting a few vet squads with tri-plasma to drop in on his rhinos and blow them to hell to give you more time to shoot them as they slog in. they'll be using cover to keep your heavy weapons from doing too much to the transports, so don't depend on your lascannons. rough riders with meltabombs or meltaguns might be a good option too. basically, you want to stop his rhinos as far from your lines as possible, and force him to walk as far as possible through your fire. enough lasgun shots WILL kill a marine.
Try fielding as many missile launchers or lascannons to take out the rhinos. If you decide to take some in support teams, give them cameleoline and hide them somewhere.
As for the Daemons, ratlings can make quick work of them.
And if all else fails, try using allied Grey knight Terminators. If used right, they'll stop thos plague marines dead. A few psycannons along with that to take care of the Greater Daemon.

Ya Allied Grey Knights would do the trick, but c'mon, lets play to the spirit of the Gaurd eh =).
Dunno why yall are suggesting lascannons and missle launchers- really overkill for rhinos. Keep some handy for forcing his DP to make invul saves, though ratlings are a good choice as well (cheaper).
However for destroying Rhinos regadless of cover or smoke there is no better than dakka. Autocannons galore! Long range, high strength and two shots. Get some sentinels to outflank and at least two squads of fire support.
The icing on teh cake would be, as jaybird already suggested, vets with plasma (works well against marine and rhino alike..) However, I wouldnt drop them, its not as if he has a defier you need to get rid of. I would infiltrate them and have them act as a buffer between your lines and them, put them off the to flank in some ruins and rain plasma. Even if all it does is draw a rhino youve distracted one fourth of his force.
Actually, the icing on top of the icing would be a demolisher. Its a close range list, perfect for your cannon, and his list seems to lack anti tank. Also, one blast shoud insta kill his dp unless hes got a rune, which is 30 points!

I also have a healthy number of grey knights, though no sisters (which are melta heavy and might work)
For the Fat boys of chaos, is a Freacking Fast list. I agree with the idea that the main priority is blow the APCs into pieces. I use battlecannons for them, w/ lascannons as backups for take other targets (ie. vindicator). After the Rhino is stoped I just keep firing the battlecannon to the infantry that come out of the burning shells.

I'd go autocannon heavy and hope to get first turn. Spamming those Str 7 shots should allow you to at least get a transport or 2. Once those marines are out in the open you can let your artillery and concentrated firepower work on the rest.
I think you need to spend more time on your floor.

Much as Autocannon can pop transports (especially lightly armoued ones), I would still take a Lascannon or three to nail the Vindicator and violate the Daemon related things.
Apart from that, against a list like that, which unless I have missed something, seems to lack serious anti Tank, your three Russes (2 basic and your Demolisher) will have a field day so long as neither the Vindicator nor the Daemonic gribblies gets too close. So, Nail the Vindicator with Lascannon, f*** up the Rhinos with Autocannon fire and go to town with Ordinance and your infantry mounted firepower.
Oh, and kill the bikers and Raptors with your big guns while your infantry are busy popping his transports.
Basically, a couple of platoons with an Autocannon in every squad, an AT squad with three Lascannon plus your heavy Armour and you ought to blow him away sharpish.
