These things are possibly the most classical aspect of IG. That is, an Imperial Guard army is typically able to bring to the field far more heavy weapons than any other army.
But there is far more to it than simply trying to outgun your opponent. Often people strive for a decent mix of weaponry, to tackle many kinds of foes without changing your army list. Others who face certain opponents many times will instead taylor their list a distict way, in order to take down a specific style of army.
Then there are the different means of bringing these weapons to the field. Do you take heavy weapon support squads? Or even heavy weapon platoons? Do you use servitors and their plasma cannons? Or do you simply run all your big guns in your infantry squads?
Perhaps you refuse to give heavy gear to your grunts at all, relying on a mix of special weapons and/or tanks to grind your opponent.
And some people also feel that certain guns are far superior to others, or that things such as lascannons should only be found in support squads, or that mortars are only great when spammed. That heavy bolters are better vs marines than autocannons. Or that autocannons are better vs marines than heavy bolters!
So what are your thoughts? How do you run your heavy guns? And why? Bring it all to the table, and start blasting away.

I think HW are a must for IG squads, they really do the most damage in the game and I take a mix of them.
All four of my line squads take heavy bolters, so does my armoured fist, I feel the extra shot out ways the benefit of taking autocannons in the line and they look more realistic as well, you can picture a squad moving through the rubble with a HB but an autocannon? I feel autocannons are more a dedicated fire support choice, and I take three in my fire support team, scoping for light vehicles or pockets of heavy infantry, they fair better against marines than HB’s, although that might be my dice rolls! HBs love Eldar, Nids and Orks, and combined with a grenade launcher they can really take apart swarms.
Finally I take missile launchers for AT, they aren’t as good as lascannons, but they are cheaper and more versatile. I try to balance my list our so that I know whatever I face from Mech Tau to Tyranids I won’t have any fifth wheelers in my army, I also don’t much like infantry lascannons from an aesthetic point of view, I prefer to see them on vehicles. I run four missile launchers and pretty much rely on throw enough excrement at something and some of it will stick!
Personally i beleive that a heavy weapon should be thrown into everything whrever possible. There such a good price for the points thay cost i cram as many as possible into all my lists.
Heavy Bolters i see as my Infantry squads weapon of choice. Shorter range as they will be close to the enemy and plenty of shots coming out ofit to make sure my guy hits somethings. In my opinion Lascanons and Autocannons are not a great choice of weapon in infantry squads. To fewer shots and they look bigger and more clumbersome for infanty which may have to move. I wouldnt be adverse to a missile launcher in these squads but they cost more a few more points and on a unit that will get shot to peices id rather keep it cheap;
In my support squads i loads up 2x Autocannon 1x Lascannon 1x Missile Launcher teams never mixing qeapons. No pressure to take them all but i can mix n match. vs anything with good armour saves or AV14 tanks for instance my lascanons will come out to play. Vs swarms or lighter armed veicles my missile launchers will come get a taste. Autocannons always back here no HB's. Longer range and more strength for supporting my ligher equipped infantry squads.
Autocannons will see action closer to the enemy on sides of my sentinels. Ive yet to decide wether my vet squads would benefit more from autocannons or HB's. Again its extra strength vs shots. Maybe some more replies here will tell me my answer lol.
I put a HW where ever I can, as I think for the points, they are well worth it. I have a set of three Mortars, a set of three Heavy Bolters, and then a mix of Lascannons, Heavy Bolters, Missile Launchers and Auto-Cannons in my platoon squads.
With a mix, I have a good variation against different sets of enemys, without having to change my list.
I take a dedicated mortar team with my HQ. So useful and fluffy.
But my favorite heavy wep is a tie between the autocannon and missle launcher. Autocannon is the perfect middle point between HB and LC. But with the missle launcher you get versatility: a frag for anti-inf and a krak for anti-tanks (some of them anyway).
Versatility is pretty important to me, which is probably why I field grenade launchers more as the more frequent special wep.
Big guns? Yes please.
Weapon wise, I like the Autocannon in my line squads for range purposes when not drop-trooping, also it makes a decent back-up Anti-Light Armour gun, becuase lascannoning a Rhino or a Raider could be considered a waste of battery. However, for points purposes I often take the Heavy Bolter, to shave a few points over the army and allow for something else. Three shots is also very nice.
Also, I often find myself short of anti-tank power with only being able to fit a single Lascannon support squad in, so recently I have been considering a few Missile launchers in my line squads for backup AT and passable Anti-Personnell.
Mortars I dont like unless they are in a squad, lone mortars here and there dont seem right. At some point I want to try and entire platoon of them to see just how devastating serious barragery is. Probably not very, but mortars are a classic infantry support weapon.
As for allocation, one Anti-tank squad with a trio of lascannon I always take, and if I can spare the points I try and fit a fire support squad in. Then its whatever I feel like in the line squads, trying not to miss any of them out. It is rare I will have the points for a Heavy Weapon platoon, and I dont have the models for one if I want big guns anywhere else in my list.
One thing it is always worth remembering, there is no "best" heavy weapon, they all have their place, and every last one of them is worth the points. Even in mobile squads, a few points in a heavy weapon is worth it - even if it isnt a cheaper one. They probably wont be moving EVERY turn, and two kills of anything has made back their points, for the cheaper heavy weapons one kill of anything will do that.

BS3 can be a downer most times, so I've started to only take multi-shot heavy weapons in platoon squads and leave the missle launchers and lascannons to heavy weapon squads (and vets) with sharpshooters. I really like how it's been working out. I used to take more missle launchers in line squads but they were ineffective so often and then it wastes the entire squad's shooting.
The autocannon is my favorite of all the heavies and I prefer the missle launcher for AT duty, but I don't deal with much heavy armor
Personally, as a tread head, i use tanks for most the "heavy lifting" and intimidation factor. But i must say, HW are the most important part of guard infantry.
I generally give my platoons (2-3 squads) 1-2 heavy bolters and 1 rocket launcher as well as either a Plasma gun or Grenade launcher (or flamer in the city). I run lascannons or autocannon in platoon command squads to deal with the "heavier" stuff.
With my command squad i run a mortar team and a mortar support squad.
