Im currently running a pure GK army. Have roughly 24 GKs in power armor, with 3 incinerators, 3 psycannons and 4 justicars. 8 GK Terminators, including a librarian I modified to run as my Grand Master and Brother-Captain Stern. I also Have a Dreadnaught and a single land raider.
Im planning on picking up a 2nd LR when the plastic crusader bitz come out later this month. But im torn over choosing either more Terminators, PAGKs, or perhaps taking some Inquisitorial storm troopers(I really dont want to take stormtroopers)It seems like the only units that rack up any significant number of kills are the termies after I deep strike them in.
Would it be best to perhaps say take 3 larger squads of PAGKs and bolster my HQs retinues? Then have one squad of PAGKs foot slog(armed with psycannons) while the other two get in the land raiders for more mobility.
Also is there any fluff over the size of a GK company? I would love to go pure GKs and make an entire company. I was wondering if since they we're larger than a normal SM chapter if there companies were larger or they simply had more of them.
Im afraid that the "fluffy" answer to your question about company sizes is a disappointing one.
Fluffwise, Grey Knights are spread out all over the galaxy in squad sizes, and only very rarely (like once every 100 years or so) form up in any larger formations and go to war.
But, since this probably doesnt cover your average tuesday-night game with cousin Charlie and the rules clearly allow larger formations of Grey Knights to be fielded i wouldnt worry too much about it and just go with a size force that feels good for you.
i would agree with the no fluffy answer but for my Pure GK structure is looked into the brit army lists and based the number of men roughly on a troop (special froces unit size). The SAS (best of the best and all, use this) it's about 30 - 50 guys i think. Seeing as the grey knights are the best and so are the SAS i based it on their numbers.

so taking into account Mr. MiketehFox's advice you could boost you numbers and say you force was 'a Grey knight Troop'... maybe

Make a Redeemer force. That seems to be the largest formation Grey Knights go to battle in known to us.
It's pretty much one Grand Master or Brother-Captain Stern and six or more squads of Grey Knights, varying between Terminators and Power armor. The one given as an example consisted of four squads of Grey Knights in Power Armor and two in Terminator Armor, with Stern leading the formation.
As for what to do next... Yes, I agree with Mike Teh Fox, it needs more Grey Knights in Power Armor. I never leave home with less than 40. Preferrably 60.
If you feel that the Terminators are the only ones capable of doing any significant damage, then keep your PAGK together instead of splitting them up. GKs are all about QUALITY, and when you've got a good 30 or so hitting the same thing, that's QUANTITY.
Mount one squad in a Landraider, have another full squad follow that Landraider around using it as moble cover I suppose. Both may be better off taking Incinerators, while your remaining GKs are formed into mini-purge squads (5 man squads of 2 psycannons) and take objectives/shrouding snipe. That's of course if you want to use those psycannons. I'd replace them with MORE PAGK. Terminators with a Land Raider will be mostly fine and probably kill whatever they're determined to kill.
Short of it, needs more PAGK.
Never underestimate mass storm bolter fire, and strength 6 weapons.
I'd run more PAGK if I were you, just to give it a shot. They've done more for me than terminators have. A BC with psycannon and a small retinue is enough for a small counter assault unit.
