Ok so I was looking at the SM Bike squad and was thinking of maybe adding some to my army but the thing is in thier profile they get 1 attack thats it. I find this odd considering you have the SM and the bike itself. So does the bike get one attack or the SM/bike get 1 attack total?
Sadly bikes are only 1A. You can give the squad sergeant a couple of CC weps, I think to gear him up (some people think he's a great place to issue a powerfist- I tend to agree) but not everyone in the squad. You can issue a couple of special weapons to the squad. Flamers and meltas are popular; 2 flamers are great for attacking infantry and then assaulting, meltas for tank hunting especially when backed up by krak and that powerfist.
The advantage of the bikers over assault marines is their greater survivability, turbo-boost and more shootiness. If you look at it like this- the assault marines get 3 attacks on the charge, with a bolt-pistol shot each. The bikers get 2 attacks but 2 twin-linked bolter shots.
No more NG spearmen, thanks! Now I need some pump-wagons!
The Paint Monkey prettymuch spelled it out, bikes aren't just an assaulty unit, they are a mobile shooty unit which can assault.
Also, a bike is a mode of transport, not a warrior, hence the lack of an attack. Otherwise you'd have to chain motorbikes up lest they take a bite out of a passing pensioner and it ends up all over the cover of The Daily Mail.
That said, the greater speed of bikes does help to ensure you get the charge (though admittedly, so do Jump Packs), so you are more likely to get that extra attack.
Steering - it's all in the thighs...
Fluffwise though... if the black carapace allows you to interface so entirely with a suit of power armour... surely left/right fast/slow could be added in fairly easily?
You could just ask the Machine Spirit to run the Auto-drive protocol while you dish out the punishment

I would imagine you probably don't take part in the assault phase at full speed - you probably drive into the enemy, flail about with your chosen implement, then drive away as soon as you are clear. Otherwise surely all bike squads would have Hit & Run?
Unrealistic though, if you look at the equivalent from cavalry; they charge in, but once the impetus of the charge is lost they basically lay about until they are able to get clear again... it's no drive-by, that's for sure!
