So I keep seeing threads on the internet talking about how easy it is to beat Daemonhunters, or how GK and GKT arent very good for the points cost etc etc etc
I am trying to create a new 40k army and I really like the thought of the GK. Everything I've read about them would deem them as maybe the best of the Adeptus Astartes forces?
Is it viable right now to field an all GK army? I mean I am not one who really am concerned with winning every battle as long as it was fun and tough fought, so would it be fun to put an all GK force on the table?
They're not a very forgiving army, let's put it that way, and they're quite... involved. They're definitely fun to play though; if that's your main criteria, and you like the fluff and models, I say go for it.
Stink yah! well, I guess it depeds what you mean by "all Gk," cuz I always run a few Stormtroopers (meatshield in a rhino plus the melta's are key).
There are 2 big holes in a GK only list
1) no low cost units to fill out the list (unless you run STs) = you will ALWAYS be outnumbered (like 3-1)
2) very little anti tank (and there are a lot of tanks out there)
as long as you are aware of these and keep them in mind when you build an army, you can make a decent list.

well, I had the very same questions you had a while back, when I decided to embarm on this crazy mission, collecting an all GK force. Turns out though, it's wicked fun, regardless of win/loss. It's a nice force to play, you have so few units, you really are forced/have more time to think about your tactical options, which led me to my first win on account of remembering to not charge forth and kill everything, but actually grabbing objectives
Now, if I could just figure out how to beat the nid list of a player in my club, it'd be all daisies and butter...

The DH army is definitely not one of the "power codexes". That honor would have to go to Orks, Chaos Marines, and the new IG.
But that doesn't mean that DH armies aren't competitive. However, as hinted at already, this is a difficult army to master. Most people who come to the DH from other armies -- especially Space Marines -- make the mistake of thinking this army is essentially an assault-oriented Astartes force. It simply isn't.
The tactics for successful play with this army are unique to it; no other force operates like it. I recommend checking out the following two articles.

The first article is actually a relatively brief distillation of the 2nd. One caveat: Both authors are very keen on land raiders. There's nothing wrong with this, but I can vouch that you don't need land raiders to win games with GKs. Most of my games employ dreadnoughts instead of raiders, and I do just fine, even in tournaments. (I just like fielding more GK goodness!)
And finally, there are other good reasons to play GKs in spite of the learning curve.
* Best fluff of any 40K army.
* Best model range of any 40K army. (How can you not admire those Terminators and power-armoured GKs?)
* Unique. It's a rare army, so you'll always get lots of attention and can wrong-foot opponents who just have never seen it before.

Indeed we are a rare breed but as of late i see =][= codexs getting a bit more attention thanks to the SM and IG dexs. Using our GK or GKT for flavor or to plug holes in there army's.
If you o the whole hog though then all thats been said above is all you'll need. Pure DH or pure GK, 2 different things but not so bad as allying in (spits on ground) lowly IG!
Only other advise i'll throw out is the modeling..... or there lack of. It will be hard as everything is metal (apart from dreads and LR) but i dont want to fiddle with then because they look so good anyway. But because you will only field around 30-40 men and the odd tank you can realy spend the time painting them to look stunning
