As i have looked at the vet squads i have seen few actual uses for them. Anti tank squads and drop units only thing seen them used for.

It's just a great way to get more special weapons in your army. And it's a troops choice.

I like a counter charge vets unit with demolitions and 3 flamers.

Three meltaguns in a Chimera, or a cover-snooping firebase with sniper rifles, some form of heavy weapon team, Harker and Forward Sentries. Expensive, but it's a scoring unit, and deployed in cover it'll be difficult to shift.
I think they've got alot of uses to them, not just triple melta or triple plasma for vehicle and MC hunting.. First off they are scoring, that's a nice thing.. They can be used for anything a normal infantry squad can be used for but will usually perform better..
The army I'll be fielding will be mechanized as I think chimeras are just awesome for their price and I considered for a while whether to take platoons or veterans, in the end veterans came out as the winners..
They got the advantage of not requiring a platoon command squad to field them also (I consider this an advantage as I don't consider normal platoon commands all that good.. too fragile and only one low range order (and not the good orders anyway).. If I stay in the chimeras I won't even benefit from orders.. also finally on this issue if I were to rely on orders I'd much rather take a second company command (better range and orders)..
Also if you consider how an ordinary infantry squad will perform vs. the veterans the vets can take up to two extra special weapons and they got better bs to help more of them hitting, the only squad loadout for infantry squads that wouldn't benefit greatly from having the extra special weapons that the veterans got access to are to me the single lascannon (albeit it's often supporte by plasmaguns, which is again better with vets..).. but even for this purpose every single point you pay extra for the veterans won't go wasted.. an infantry squad with lascannon comes at 70 pts and a veteran squad at 90 pts.. the infantry squad costs ~75% of the veterans, but will also only hit ~75% of the time.. if you take the price for the chimera into consideration the infantry costs more than ~75% of the vets =) might be stupid examples.. but whatever..
On a final note they get free krak grenades.. (not that it means all that much.. but hey they perform aswell as normal infantry squads and even get these for free.. might come in handy at a time, dunno, adds a slight bit of versatility which is always nice)
As I think 6 scoring units are more than enough (won't be fielding this many I think) the vets are all worth it to me..
But that's probably as I'm going mech..
3 Melta Guns, BS4, Chimera/Valk, scoring, nuff said.
They're for filling out minimum FOC on the cheap so you can start taking allies and Valkyries and build a Sisters of Battle Air-Cav army. Everybody knows that.

You can't remove them from an objective, provided it's within Area Terrain, short of stomping the Emperor's Grace out of them. At range, they're dead killy.
Otherwise, Sergeant with Power Fist is nice. As well all of the weapons they can carry along with them.
Most importantly, they're a <100 point troop choice, freeing up other options in smaller battles where having two platoons just won't leave you with enough for other options.
