I usually field mine with lascannon and dual plasma cannons.
Didn't do much really. As they need to move to get into range.
Since they are so good at popping armour, why not give them multi meltas and put them mid field as a anti armour deterrent?

I'd be worried that you won't get many turns in which the russ is sitting still, and it'll therefore only be able to fire it's main gun and 1 of the multimeltas.
Plus i'd tend to keep my tanks focused if i take a demolisher i'll give it a hull H flamer and that's it, they are veyr high up on peoples 'kill this first' lists and i find that they don't live long because of it. If i wanted an antitank tank you can get a vanquisher with hull lascannon + pask for only 10 points more, sit it bakc in cover and terrify enemy armour.
I equip my demolishers with just a hull LC. With them really needing to move to get into range, sponsons do not make sense.
I will also argue against using a heavy flamer as the hull weapon as it has an extremely short range. If one fires at a squad at that range with the main cannon, it is not unlikely that you will pop your own tank with a scattered shot.
That leaves hull HB or hull LC as the options. I like the LC for anti tank and anti character duties. If one uses a heavy bolter, one can wind up saving some opponent's models rather than killing them.
Personal experience as well: Eldar farseer standing alone, direct hit from Demolisher cannon, shrugs it off only to be popped by the LC.
I say heavy flamer as an assault deterant, at 24" range it's likley something might get close enough (swooping hawks + their haywire grenades for example) or people with meltas, and as you said yourself you can't really use the cannon at that range so the flamer comes in veyr handy.
Hull LC is nice to though (in honestyi'm dubious about giving single shot weapons to guardsmen if i have to pay extra for it)
I run Demos with hull HB and sponson multimeltas and get good results. If you want to save points then I'd second cman2001's advice.
