I love my nuns with guns!
Well there are actual Fenrisian Wolf models. A lot of people have been using Chaos Warhounds from Fantasy range where I play, they look a little chaosy but hey, they're just vicious obviously.
Check my Blog for Battle Reports, useless ranting and more! Comments appreciated.

Or just go with the plastic goblin rider wolves?

I use the chaos warhound plastics.
Green stuff to fill in the holes on their heads, then form ears.
Wrap their tails in GS (glue the tail on the model first), then use a Sculpt tool or toothpick to make lines. Start with thick ones, then go back over making thinner ones. This will give you a fur-like texture.
Also did this down the legs/back of the hounds, to make them more wolf-like.
You could just buy the models others have posted here.

This is the guide I used, in making my fur. It's for mostly making fur items, like collars, but can work on most of the model. Just take your time, and you'll do fine.
