Most players won't give you a definitive answer, because they're both used for different things. It depends on your list composition.
I run two demolishers, but not because I love them more than a regular russ, but because they fit my list better. If I changed my list around, I'd use a regular russ.
The demolisher is there to draw fire, and charge lines. It's whole life is to literally go berserk on the enemy, forcing them to deal with it or die.
The LRBT is more about long range support. You can sit back a medium distance and pepper the target with large pie plates. The demolisher is better for Anti-Tank duty (because of its high strength), but russes can be better against AV12 vehicles (because the battle cannon can realistically destroy them before they get close). Either way, even a demolisher can start to fire second turn (usually).
Most importantly: A russ is a russ. Keep 'em vanilla with a Hull Heavy Flamer, no sponsons, and almost every one of them will treat you well (though some better than others).
It's honestly totally dependent on your list.
If you're building your list around russes? Pick one you like and roll with it.

Kerensky is right...its based upon how you want to play and the style of Imperial Guard you want to work with. I love my balanced force, and I currently field a dem for up close, in your face fighting. The Dem can unleash a hellstorm of firepower, since its cannon can basically cut through tanks and inf just as easily. I throw a couple multi meltas and a heavy flamer on it and its basically just a crapstorm of firepower.
I also have a LRBT for long range support, since the battle cannon does a great job of messing up transports and light tanks as well as clusters of inf. Now that I have both, plus a fully-loaded executioner just for fun, i can deal with almost any type of enemy.
So the answer to your question is...both?
I agree with what everyone else says, but a lot of people use demolishers over LRBTs because of the much improved main gun, which only costs 15 points more, the downside is its range.
So if you need some long range medium fire power then a LRBT is for you.
If you need some hard hitting high strength low ap shots and your not worried much about range, the Demolisher is for you.
It really depends, I used to favour the LRBT for it's range but I've been turned to Demolishers, and now I only take demolishers because the range isn't an issue for me very often and the main weapon is awesome for killing ANYTHING .
I generally go with the normal battle tank, for long range versatility, although a demolisher is probaly a safer choice when playing against Sm's simply because its very handy against terminators.

Have you considered an Eradicator? All 3 armies have very weak troops. It would kill pretty much any of their infantry on a 2+ and inta-kill most Eldar leaders. The only Tau units you need an ST 10 weapon against are their big AV 13 skimmers and TBH taking a Demolisher as dedicated AT is kind of pointless. Use lascannons or melta guns.
For me the Russ is #1 a fire magnet but the Nova cannon would be very effective against the troops of those 3 armies in particular (and Guardsmen so watch for friendly fire )
I know it's not what was asked but I've been wishing we'd get some Eldar or Tau players at the local club so I could actually take one of these cool tanks.

Eldar have an average save of 4+ apart from some aspect warriors and bikes, so the eradicator will rip through them, while still insatnt killing!
Tau rely on 4+ saves and cover to keep their infantry alive, need I explain?
Out of the two tanks you asked about i'd go with the generic russ. Nether of the three have significant AT abilities in combat, so you dont need the extra rear armour, none field large numbers of troops, and they can all bust vehicles advancing to get within the 24" demo cannon range, better to stay back in cover.

Having played against tau and dark eldar regularly for onwards of 6 years Im gonna say out of the two the generic russ is better: the demolishers high strength isn't needed against those armies and the AP2 isnt needed either since they have very few units with that high armor. Also the long range of the battle cannon is desperately needed to compete with rail guns and the demolishers short range will get it dark/bright lanced quickly.
For me, (first army being IG) this would be an easy choice. Also if you have Griffons a pair of them could do a world of hurt on both those armies for the cost of a single Russ
