Basically, I've just started my IG Army and am having trouble choosing which Cannon to put on my tank, For those of you not familiar with the options, they are as follows:
Vanquisher Battle Cannon
Eradicator Nova Cannon
Any suggestion and why? Thanks!
Have them all with magnets?
If you have to choose I would say go with the classic battle cannon, it's good in most situations whereas the others are more specialised. The Exterminator is also pretty good though, especially against meching enemies or lists with lots of MCs. Then the Eradicator for any non power-armoured opponents, then the Vanquisher which is rubbish because it has a tiny number of units it can attack and it's unreliable and expensive for what it does. The Vendetta beats it hands down in 99% of situations.

My order of preference is Battle Cannon, Demolisher, Exterminator.
The battle cannon is nice due to long range, high str, and it's large blast area. It will serve you well most of the time. It's also great for eating large chunks of marines and nid warriors (instant death vs T4 makes me warm and fuzzy). It has the tertiary benefit of being the cheapest of the three. I usually add a hull lascannon for an extra shot to pop a transport.
The demolisher sacrifices range for power and makes an excellent bullet magnet. I recommend the demolisher for dealing with necron lords and monoliths, and anything necron on a skimmer body. it's short range makes it assault fodder, so I will usually add a hull hvy flamer.
The exterminator comes in a close third. It provides a high volume of high strength shots and is one of the few tanks in my opinion that rate the expense of using Pask. The higher rate of fire is significantly enhanced with a BS of 4. The long range will also give you a chance of sitting still for a little more ap vs vehicles. I will usually take a Hull lascannon here also.
I'm curious to hear what other folks think on this topic.

Just magnetize all of the turrets, I did the same with all the guns in the Demolisher kit.
You'll probably get the most use out of the Battle Cannon, Nova Cannon, and Exterminator (in order of frequency). Vanquisher you will probably never use unless you play a lot of apocalypse games.
Speaking as someone who has been on the receiving end of all kinds of Leman Russ attention (my good friend has 7 of the damn things) I can fairly safely say that the Exterminator, if that is the Heavy 20 machine gun, is crap. It doesn't scare me at all. It is more expensive than the standard tank and mono-tasks it to killing light infantry. Which it actually isn't that good at because of it's sub-par Ballistic Skill and only moderate strength and AP. The standard Battle Cannon lets it multi-task on anti-infantry (everything shy of terminators should be shaking in their boots, and even they need to be somewhat worried) while also providing modicum of anti-tank due to the Ordinance rules.
The Vanquisher suffers similarly as the Dakka tank, although to the opposite extreme; it's just too specialized. It is only useful against armor but, because of it's low Ballistic Skill, it is unreliable at best. Yes, you can put Pask in it, but that drives the cost up even more and still leaves a sizable 33% chance of missing outright. If GW had given this the co-axial Auto Cannon this would be a great tank, but they didn't, so it sucks.
The plasma cannon tank (which I think comes on this sprue, but that may be a Demolisher kit) is pretty good, but it is just so expensive; it winds up being number one on everyone's s*** list. In my games against it, it has gotten a maximum of two turns of shooting, and generally only one or none. If you can defend it, it can be fantastic because it will scare just about everyone and, as such, will help dictate how they react to what you do. But at anything under 2000 points I feel it's not worth it; it's just too damn expensive.
My personal advice would be to just stick with the basic Battle Cannon. It's the cheapest and, I feel, the most effective. This principle, of being able to take fairly effective units and weapons in multiples, is the core strength of IG. Instead of taking a really good gun on a really good trooper one or two times, they take a pretty good gun on a mediocre trooper, but they do so a dozen times. You just start slinging Battle Cannon shots around the battle field and watch your opponent's army disappear.
The Exterminator is 4 shot autocannon, with the twin linked upgrade. It's a beast against light vehicles and monstrous creatures. I think the 20 shot gattling cannon is the Eradicator? I agree with your analysis though, it's a pile of pants. Who needs more anti inf fire in an IG list?
Dunno about Pask for the Exterminator, with rerolls for twin linked each shot has a 75% chance of hitting already. Boosting it up to 90% is good but it's 50 points extra and you already have 4 shots. For me the advantage of the Exterminator is that it can move and be used to draw fire. That's why I'd buy one instead of a 75 pt hydra.
If you want pure killy firepower and think you can keep your tanks safe from harm enough to leave them stationary then take a squadron of two Hydras. They will out perform a Pask Exterminator by miles.

Terminator armor going critical would be like Three Mile Island only very, VERY angry, and carrying a hammer.

You (or Lexicanum) are correct sir. The punisher is indeed that 20 shot waste of points. Such a shame. There was a tiny 4th edition IG general in my head that saw that and screamed "QUANTITY OVER QUALITY! ADD IT TO THE GUN LINE!" I suppose you could put Pask in it to increase the effectiveness, but that makes it pretty pricey. I think that the only real way to get points back on that thing is to spam small, elite squads like termies with masses of Vulcan bolter fire and hope your opponent isn't rolling lucky.Edit: The minigun-armed Leman Russ may be the Punisher. Anyway, as far as my preference is concerned, the good old standard battle cannon would be my favorite. It works on the vast majority of enemy infantry, and you can even destroy a lot of armor in a pinch. Second would be the Demolisher. Anything with a strength that high on my side is a good friend.

My favourites are
1. Basic leman russ with hull HB. With no sponsons it keeps the manouverability up and the cost down. excellent even when used in squadrons as it takes a lot on enemy firepower to earn that killpoint.
2. Leman Russ Demolisher with hull lascannon and no sponsons. Good against tanks, MEQs and TEQs and able to move & fire all weapons. The short range of the demo cannon can be a problem in dawn of war missions but once you get to 22" range there is no need to get any closer.
3. Basic Leman russ with plasma cannon sponsons make a good static allrounder.

I just bought a LR Demolisher kit for my Sisters Of Battle, and THEN read the IG FAQ which pointed out that the Sisters can only take the regular Leman Russ Battle Tank. blah!
I noticed that the turrets themselves are somewhat different between the 2 kits. Will the Battle Cannon assembly fit well on the Demolisher turret?
Well after looking on eBay for some Battle Cannon Barrels and turrets, I just decided to go with the Forgeworld Modified Ryza Pattern Leman Russ turret. It was only $18USD and I like the barrel much better than the stock one.
