What is the Optimum size for a Scout Bike Squad ?
Army : Blood Stars
1500 : 2 Vindicators , 2 Baal Predators , 22 Jump Packs

But in all seriousness Scout Bikers are not the best unit in our codex. If you were to use them I would reccomend the following way:
A unit of 4 with 3 Astartes Grebade Launchers and a Power Fist Sergeant. Cluster Mines are optional but this would give you the opportunity to Infiltrate, Scout 24 inches (remember to stay at least 12 inches away from your opponent), move 12 inches, shoot the side armour of a vehicle with 3 strength 6 shots and charge it with 3 more strength 6 shots followed by 3 strength 8 shots. After this your unit will probrably die but it all but guarantees one dead vehicle lighter than a Land Raider.

I took a small squad to a tournament recently, and while they didn't fare as well as their power armoured counterparts, they're far from helpless - if you can keep your opponent's heavy weapons otherwise occupied, most small arms (especially lasguns!) have a really rough time cracking their T5.
Their TL Bolters make them effectively as accurate as regular bikes, and the Astartes Launcher is a truly scary piece of kit - I was reliably scoring 12+ hits with just two of them, enough to devastate light infantry and even cause heavier troops some difficulty. Stick to the fringe of the fighting and unleash that on any stragglers you can find - with any luck they'll be punching above their weight.
