Since I must collect at least one imperial army (GW sub-conscious brainwashing =P), I chose Daemonhunters. Now I know they are kind of a little behind the times, but they just look so cool.
Anyway, my question is, is there any up to date advice on what to collect. I actually have someone who is going to play daemons, so maybe he'll become my favorite opponent
EDIT: I went to go see what I could buy, and now you can't even buy grey knights in squads of 5 =(. What does that mean for the daemonhunters?

One thing to keep in mind is that the Grey Knights are mostly likely going to be the next codex released so there are a lot of changes going to be made in a few months.
Right now really the most competitive way to play DH is to have no power armored grey knights (PAGK) at all. Use Stormtroopers as your troop choice and take terminator armored grey knights (TAGK) as you HQ and Elite and put them in raiders. After that spend the rest of the points on inducting imperial guard squads. It's not the fluffiest, but it is the best in terms of function.
If you want pure grey knights, a hero+retinue and two PAGK squads in landraiders is generally one of the better builds.
For example here is my DH/IG list:
Here's an example of a pure GK list:
currently I think it means wait until March or so. There are strong rumors of a new codex coming out for DH. GW's been turning off the flow of DH stuff for a while.
Hopefully soon there will be a whole NEW codex out there. In the meantime, you'll have to get an army and a codex second hand if you really need one.

In terms of GKs there are only - terminator packs, power armour blisters, landraiders, and dreadnoughts. PAGK cost £5.25 a model (more for special models) and GKT can cost twice that so have a look around ebay.
2 squads of 6-7 GKs, a retinue of terminators with your HQ, and a couple of landraiders already puts you past the 1k points level, you just don't get many models in a pure force.
The codex is available from the GW website as a PDF (incase you didn't know) - look over it and see what appeals to you.
Thanks for all the advice. I'd actually like to do a "pure" GK form, and I kind of figured it would be very few models
