Lets get straight to the point.
The combination of Grey Knights spam of psycannons and psybolt dreads, and the razorspam of blood angels and space wolves my vendettas are lasting fewer and fewer turns.
Even when they are not destroyed outright they are easily shaken or stunned, stopping much of my ranged anti tank. Has anyone tried running multiple leman russ exterminators? ure the points spent for armour are wasted against dark eldar but the heavily armoured leman russ tanks should prove much more resiliant than vendettas against most enemies.
I think i'm gona try switching my 2 vendettas and 2 leman russ demolishers for 2 valkyries with rocket pods and 2 exterminators with hull lascannons but what do you guys think? Is the switch worth it? Or am I risking too much by losing my ranged AV13-14 and terminator killing guns for more reliable transport busting. Would I be better to go with a more middle ground?
I could do:
2 valks 2 exterminators
1 valk 1 vendetta 1 exterminator 1 demolisher
2 vendettas 2 exterminators
2 vendettas 1 demolisher 1 exterminator
or i could stick with 2 vendettas 2 demolishers

On the one hand, the GK players I know have no intention of ever using Terminators; they're too busy building up those godlike psyker/wargear combos to bother much with defense. Going light on AP2 is probably fine as long as you can still kill a Purifier-loaded Land Raider.
On the other hand, your trouble with AV12 vehicles is only going to get worse if you bring fewer of them. That means the lower threat profile of Valkyries won't help them survive, if that's what you're trying to achieve.
Back to the first hand, an Exterminator will certainly help with Razorback spam. At 1,500 points, I bring a pair of LRBTs, a Manticore and an LRX. That combination works against all sorts of lists. I don't think you need two, though, not unless you want the advantages of squadroning. (Mech lists have lots of units that can't do more than one damage result against a Russ at a time. By pairing up your Russes, therefore, you can have one act as a 'whipping boy' so the other can still shoot next turn. Close combat gets brutal, though. Also, a pair of LRXs can cause enough wounds in a volley to force armor saves on sergeants & special weapons with a little luck. Or HB sponsons.)

Exterminators work, but they're not amazing.
I don't know your list, but the answer isn't scrapping the Vendettas, it's adding in more long range anti-tank to supplement them.
Personally I'd do 2 Vendettas, 1 Exterminator, and 1 squadron of Autocannon Sentinels.
I generally find it ok to only use one exterminator. The thing Is vendettas and exterminators fill two different roles. To replace them you'd need some reliable AP2 shooting from a russ. I have melta vets in my vendetta so I run up jump out and keep the invincible save first turn this is usually enough to keep it alive with two even more chance of having one alive. Once you get melta vets out you double your threats making the enemy choose which oft times will be the vets as they are squishier.
Now pask in an exterminator there is fun.
Keep your Exterminators cheap!
The only upgrade you should consider is the Hull Lascannon. Even that's not an auto-include. It costs 10% of the base cost of the tank, for an extra 7% of transport-popping ability that might be LOS-blocked by other vehicles being in your way.
Not to mention that you shouldn't forget about Extra Armor and how it combines with Flat Out (ie, you can even after being Stunned because it's downgraded to shaken). This can help, especially if you need to resort in later turns to physically blocking the enemy's advance.

Is this about Exterminators or Exicutioners? One has AP2 blast x3, and the other large blast AP4 no cover saves...if I remember corrctly?

Exterminators are the autocannon variant.
Eradicators are the S6 AP4 No-Cover Large Blast.
Executioners are the Plasma Cannon Russ.
